Olive Oil may help, but it also depends on what else is in your recipe. You definitely need something wet to hold them together. Fat keeps hamburgers together, so in essence, olive oil, or even tahini would help with your tofu/bean burgers. The tahini would be a tasty addition too.

If you are a strict vegetarian and want to avoid egg then try the Olive oil and a little flour - they need binding together as was already said.

Egg will help it to stick if you eat egg. If not, try some breadcrumbs in the mixture with some water or oil. Milk will also help to bind them together if you drink milk.
