So I added 2 lbs ground turkey, 1 can tomato sauce, 2 cans of spicy tomato's, 1 large can of kidney beans (drained), 1 tbsp brown sugar, 3 packages of chili mix (i like it spicy), and a finely chopped saute'd large white onion. And half a cup of water (the recipe called for 1 cup, but I thought for sure it would be too watery). I put it in the slow cooker over night and this morning it seems kind of watery STILL. So... What else can I add to it to make it thicker?

You control the thickness by the liquids you add or not. Use less tomato juice. You've already got enough tomato with the diced ones. Adding tomato paste would be just way too much of it. It's not spaghetti sauce, it's chili. You still want the meat, cumin, and chilis to be the predominate flavors. I'd add stew meat, so that you can end up with distinct chunks of beef, but that will require about 3 hours of cooking, thus solving the thickness problem at the same time. I use a pressure cooker to get a better result in less than an hour.

Leave the lid off. If the lid is on the steam will just keep adding water to the chili. It should reduce in time. If not, I'd use cornstarch I guess. I made chili on sunday and added most of the things you used but no water and no chili packets--just chili powder and cumin. Mine cooked in about an hour. Next time I'd skip the water and seasoning packets.

I have used mashed potato flakes many times to thicken sauces and soups. I suppose a little flour or corn starch would work too.
Hope this helps!
PS. I am also making spicy chili for dinner tonight, but my family likes it juicy so they can put tons of crackers in to thicken it. lol

Did you brown the turkey before putting it in the crock??
that frying/browning process takes a lot of water and grease out of the ground turkey or beef.
If it's too watery, cook it with the lid off (stirring frequently) and cook off some of the water as steam. Cook it at a high temp so as not to cook the chili for a long time but a high temp will boil the water off faster.

Cornflour(best) will make it thicker and also regular flour(not as good, but will work). I've done it before and it does not effect the taste but will thicken the chili.
