I've always found that a slow cooked stew is the best way since it can be a bit tough sometimes. If it's the first time you've had it then it might give you the sh!ts because it's a very rich meat. Bloody delicious though.

When I used to cook venison, I'd first microwave it for 15 minutes before putting it into one of those enamel casserole dishes (the ones with the dimples in the lid) adding chopped onions, seasoning with a little salt & plenty of black pepper.

I then cook it slowly in the oven.

It used to come out extremely tender, smelling gorgeous & with loads of ready made gravy.

(Not that I ever ate it - I just made it for Dad & the rest of the family ... kept seeing Bambi's mother die in my head & couldn't face eating it ... though it did smell so wonderful)

I cooked one in a large crock pot with onions and beef broth, then when the meat is tender, shredded it off the bone and added barbque sauce - it was fantastic!

slow cook, till the meat is really soft, in a pot with meat stock white wine, a little garlic, finely choped, and whole baby shallots, salt and pepper to tast. perfect with mash and string beans. . . .
