Zesty Italian Chicken with Pasta & Vegetables
Prep Time: 5 min
Total Time: 23 min
Makes: 3 servings, about 1-1/2 cups each
1-1/2 cups whole wheat penne pasta, uncooked
1-1/2 tsp. olive oil
1 medium red pepper, cut into strips, halved
1 medium zucchini, cut lengthwise and crosswise in half, then cut into thin strips
1 pkg. (6 oz.) OSCAR MAYER Grilled Chicken Breast Strips
1/4 cup KRAFT LIGHT DONE RIGHT! Zesty Italian Reduced Fat Dressing
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
COOK pasta as directed on package.
MEANWHILE, heat oil in large nonstick skillet on medium-high heat. Add vegetables; cook and stir 5 min. or until crisp-tender. Add chicken. Reduce heat to medium; cook 3 min. or until heated through, stirring occasionally.
DRAIN pasta; place in large bowl. Add chicken mixture and dressing; mix lightly. Sprinkle with the Parmesan cheese.
Tips
Creative Leftovers
Cover and refrigerate any leftovers to enjoy the next day as a cold pasta salad.
Substitute
Prepare as directed, using KRAFT LIGHT DONE RIGHT! Golden Caesar Reduced Fat Dressing.
You can also serve this with a small side salad and garlic bread

Hey there, we are having shrimp stir fry tonight. Go to the frozen section and get some stir fry veggies and a bag of frozen shrimp that are already cooked. I like the kinds with the tails off. Saute the veggies in a little olive oil in a non stick pan. When the veggies are almost done, add the shrimp, salt and pepper, and a little soy sauce. I also use a little ginger marinade/salad dressing to give it more flavor. The frozen veggies usually take about 7 minutes to cook. I soak the shrimp in water while the veggies are cooking, to thaw them out. The whole meal takes me about 10 minutes to make. Make some brown or white rice and you have a meal. Enjoy!

One addition to these wonderful suggestions...
In order to not buy so much of something, only to use a bit and have the rest go bad in the fridge, consider when you make your salads and stir-fry items, to shop the salad bar at your local grocery. Many stores now have salad bars priced per pound and while it's a bit steeper in price, you're not paying for what you don't use so nothing goes to waste.
Plus the entire dinner is one stop at the store and consists of a package of meat or shrimp, a box of goodies from the salad bar, and maybe some frozen egg rolls or spring rolls if you're doing stir-fry or some good bread if you're doing an entree and salad. Express line checkout!
Keep rice, rice noodles or ramen, and seasonings at his house (even those little packs of soy sauce that come in Chinese takeout are great to keep for later use!) Stash away some Jasmine tea bags and a box of individually wrapped fortune cookies to pull out for stir-fry nights :)
You can also use this method for Pasta Primavera - one stop for salad bar stuff and a jar of sauce, box of pasta, some crusty bread, little bag of shredded parmesan from the cheese aisle and you're done. Nonni's Biscotti is a nice keeper for the pantry shelf, they're individually wrapped and handy to have for any Italian meal dessert. Could always pick up fresh berries to go with...

Here's an easy chicken Kiev recipe. Melt 1/2 stick of butter, tsp garlic powder, tsp salt and pepper and sprinkle parsley-put it in a small dish in the fridge until it's solid. When your butter mixture is solid--- Beat 1 egg and 1tbsp of milk in a dish. Dip the chicken breast in the egg, coat it with flour, dip it in the egg again and coat it with bread crumbs. Take half of your butter mixture and place it in the middle of the breast(on top). Wrap the chicken around it (should be easy since it's sticky with egg/flour/crumbs, but if it's not-dab more egg and flour where you're trying to close it). Do the same with the rest of the mixture and the 2nd chicken breast. Put in fridge for 20 minutes(make sure it's covered). Preheat oven to 350 and bake for 45 minutes uncovered. Soooooooooo good!

Whatever you fix make him pay. Sounds like he is taking advantage of the situation by making sure he doesn't have much food in the house so that you have to go pay for the food. Take him to the store and when you get to the checkout tell him you forgot your wallet that way he has to pay. And don't pay him back when you get home.
I think steak and baked potatoes would be good for supper.

Spaghetti carbonara.
Cook spaghetti in pot of boiling salted water until al dente. (until its done the way you like)
Cook some bacon bits until crispy. Mix 2 eggs and 250 ml single cream with 100 ml parmesan cheese. Drain spaghetti and place back in pot. Pour over the egg mixture and mix in the bacon bits. The heat from the spaghetti will cook the sauce. Sprinkle over some more parmesan cheese and serve with a green salad. Yum!

LOVE Nora22000's suggestion of shopping together. Why not a nice quick-cooking marinara?
Buy 2 lg. cans of whole plum tomatoes in puree
3 cloves of garlic (chopped, ALWAYS FRESH!!!)
1 med. onion (chopped)
2 tsp. Italian seasoning (dried herbs)
1 Bottle good Red Wine (good enough to drink)
3 Tbsp. Extra Virgin Olive Oil
Salt, Black Pepper & Hot Pepper Flakes to taste
1 lb. Pasta (yer choice)
Put water on to boil in large pot for pasta.
Pour tomatoes & their liquid into a large, deep bowl. Put your (clean) hands in their and squeeze each tomato until their in smaller pieces. Best part... do it together.
In large heavy skillet, heat olive oil on med.
Add garlic & onion to hot pan, stir frequently until cooked, about 6 min.
Add a little salt & pepper & hot pepper, keep stirring.
Pour in 1 glass of wine... allow alcohol to cook off, about 2 min.
Add all tomatoes... pour carefully, they splatter. Stir, bring to a bubble, about 3 min.
Add Seasoning. Taste. Adjust salt & pepper. Turn heat to LOW, cover & simmer while preparing pasta.
DON'T FORGET... salt the water just prior to adding pasta.
After draining, put pasta back into its pot w/ 1 tbsp. butter & 1 more tbsp. olive oil, and a scoop of sauce. Toss well.
Serve w/ rest of sauce, good bread & some parmigiano reggiano cheese. Grate your own. Serve rest of wine. You won't be sorry!!

grilled fish,with a salad and garlic toast maybe some parsleyed potatoes and for dessert split a banana mix some butter and rum pour over the banana and bake it with a few raisins sprinkled on top

Stir fry. Prepare some rice...cut up veggies...celery, carrots, onion, snow peas ect. (there are also canned items you can use and seasoning packets) slice a meat of your choice up thin.(if you want meat)..before I got a wok I just used a dutch oven or frying pan...works. throw it all in w/the prepared seasoning packet and about 5-10 min later...dinner is done:)
