expierence only answers and web addresses please., how can i make better venison jerky. i have had limited sugsess previously,and eaten mutch better jerky than i can make.i need to make improvements, thanks

Put 1/4 cup of soy sauce in a bowl. Add 1/4 cup of water. Add 1 Tablespoon of Garlic Powder, 1 Tablespoon Onion Powder, 1 Teaspoon of Cumin Powder and 1 Teaspoon of Coriander Powder and 1 Teaspoon of Ginger Powder. Add 1 Tablespoon of Honey and mix thoroughly. Take a paint or basting brush and brush on marinade or dip Venison strips in the marinade. Let sit for 2 hours and then start Drying process.

My brother made some last year, he cut the meat fairly thin, soaked it for several days in marinade, I believe he used teriyaki sauce and added his own spices, then popped it into the food dehydrator. Tasted fabulous!

How do you do it? Are you sun-drying your jerky?

Are you putting enough spices with the salt?

Have you read the Foxfire books? They are full of "how to" advice for things such as this.

What are you smoking it with?Use another kind of wood.And don't over smoke it.
