D'you know, I get REALLY pissed off with all this nonsense about olive bloody oil! What is the attraction? If you want olive flavoured veggies, then go ahead, but I like my spuds to taste like spuds (and that means roasting them in dripping or lard!) and much the same goes for any other root veg.
I got so used to seeing all the TV chefs pouring (sorry - """Dribbling""" (!) olive oil over everything they can set eyes on that I tried it once over some spag in the spag bol. It was ferkin horrible - greasy and yukky, and when it comes to salads, if I can't have some good old salad cream - not even poncey mayo! - then keep it!
Just one other thing about olive oil: Why does it always have to be "Extra Virgin"? - why can't we have some "Right Old Slag" olive oil just for a change????????????

If you want to go on a diet and loose weight, you have to cut all the oils, including olive oil. olive oil has got all the calories as any oil but is less in cholesterol and fats. It is good for our health but in moderation. There is also light olive oil if you want. There are also the 1calorie sprays made out of olive oil which are considered to be the best. When roasting something, try mixing olive oil with water. It comes with the same taste.

olive oil is main source of dietary fat, combined with eating a healthy diet that is high in plant foods, may reduce your risk of cardiovascular disease and diabetes. Moderate amounts of olive oil may also reduce abdominal fat, if eaten as part of a diet high in plant foods.
olive oil can lower the risk of coronary heart disease by reducing blood cholesterol levels.
Excessively heating olive oil will evaporate the alcohols and esters which make up its delicate taste and fragrance. Heating olive oil will not change its health aspects, only the flavor. Use a cheaper olive oil which doesn't have much flavor to begin with if you want to fry with it, add a more flavorful olive oil after cooking or at the table.

Any oil is fat, so when you use oil you get some fat. A little fat in your diet is okay as long as it's healthy fat. Olive oil is the healthiest fat there is. It does all kinds of good things for your cholesterol and heart health.
I found this at a website you might be interested in taking a look at:
Choosing extra virgin olive oil as your main source of dietary fat, combined with eating a healthy diet that is high in plant foods, may reduce your risk of cardiovascular disease and diabetes. No it isn't bad for you as long as you use it in moderation. It is vitally important that a person has fat in their diets from avocados, nuts, seed and olive oil. However, there are good fats and bad fats. Bad fats are saturated. Olive oil contains monounsaturated fats which protect against cardiovascular disease and polyphenols which has antioxidant characteristics and could even prevent cancer. Healthy fats are great for the skin as well. Haven't you ever heard of the Mediterranean Diet?

Olive oil is the best oil you can use, especially if it's extra-virgin. It's high in mono-unsaturates and omega 3 and will help keep your cholesterol low. Try an olive oil spray, you can lightly coat your veg this way and it will taste yummy.

Roast veg in olive oil isnt that bad for u but obviously if u eat to much of something it can be a bad thing. Oil in moderation for the body is good as it help to supple your joints, but if u eat to much it can lead to fatty deposists.
So my advice would be its not as bad as deep frying you veg but just have little amounts in moderation.

Hi there, I used to use sunflower oil, but my sources say its better to use olive oil, but its not for cooking food in, its to drizzle over the food once cooked, it looses all its goodness as soon as it touches the heat. Just steam your veg its much healthier and tastes better too :) Crunchy veg is much nicer that soggie veg, dont you think? Hope I helped you. Hayley-May

If you must use oil ----olive oil is the one to use it is an monosaturated fat--- a heart healthy oil.In fact use extra virgin olive oil because Spanish researchers say because it is unrefined it is better than others at preventing the oxidation of LDL------ or the cholesterol that damages arteries.

Olive oil is excellent for cardiovascular health.
It retains most of its goodness if not heated too high or for too long.
But the vegetables are still good.
Vegetables roasted in olive oil are still WAY better for us than most of the stuff we eat. :)
