I let my kids help me choose what we are having for dinner and then they help cook, everyone gets a day to choose. Along with the favorite food they choose, they have to choose a veggie, etc. This lets them see that it is not always easy to choose foods everyone likes.
You could try letting them choose a "number of the day" give them a range - between 5 and 15, use that as the number of bites they have to eat.

Prepare more often the veggies they like. When you have a veggie they don't like give them only a very small amount, but they have to eat them, like a couple bites. Try preparing veggies in different ways. Always serve fruit with meals, keep as a dessert. They do not eat them until last. Don't have junk food in the house, buy good snacks. Reward with a treat out at the end of each week that no tantrums are displayed. If there are tantrums, no treats out like, ice cream, MC Donald's, candy bar at the store etc...
Check out this site, they have healthy kids snack recipes that change monthly and other great things.

With my son, I always insisted that he try at least ONE bite of anything new. If he didn't like it, he didn't have to eat it, but TRYING it was a requirement. In time, he found enough things that he liked (pretty ordinary assortment of stuff) that he was eating a healthy diet. If you turn it into a contest, it will just make matters worse; just make it a rule, and let things sort themselves out.
Funniest thing was that he didn't want to try a banana split - totally thought it would be awful; needless to say, he liked it, and now (he's nearly 26) it's sort of a favorite family story. Hang in there - they do turn into people!

You cant do much. let him be hungry and ask for food. Then give him something exiting to eat like chicken nuggets, pudding etc. Keep him away from junk food in the meanwhile.

Have adults be sure to eat a balanced diet and be enthusiastic about all foods. If you don't eat your veggies he won't either.
This may not work instantly, but it is guaranteed in the long term.

Maybe get him/her involved in cooking the meal, so he/she will be more willing to eat it...
Trust me, when I was a kid I loved helping my mum/dad cook and it made it more exciting to eat it.
