Snipers. In war, by the time the third person gets lit on a match, the sniper has time to take aim.
Therefore, the third one gets shot.

I thought it would be because shortly after getting the second lit, the fingers of the person holding the match would start to get real hot, but found this:
Its unlucky to light 3 cigarettes from one match (from WWI- lighting 3 gave time for enemy snipers to see, aim and fire)

Well, when we all still smoked and ladies were still treated like ladies it was common for a man to take his date out and for the lady to have an escort A proper gentleman would first light a ladies cigarette befor his own, then his then the escourt's beacuse the last person got the taste of sulfer in their mouth with the first drag. NOw it was "bad luck' beacuse the escourt was always last, and it was kind of a drag I imagian being a third wheel. that and the icky tast of sulfer was related to the "devil" in most people's minds and no one wants to "taste of the devilish delights" beacuse that would be a sin! hope this helps

I think it comes from a story about a three soldiers lighting a smoke. By the time the third soldier gets his lit, the enemy has him in thier gun sites.
