Either Cathay or Singapore, based on food quality, service, seat comfort, entertainment options, and lounge options, for which they both get all A+'s on in all classes. I think HKG is situated in a better location for connections to the rest of Asia (from the US and the rest of the Americas at least) so I would give it to Cathay just for that slight edge. Of course, SIN is better for European and African connections.
