I think it refers to pork fat that the beans are cooked in, or as an ingredient in the tomato sauce.

You should find a chunk of pork fat back in a can labeled Pork & Beans. the fat back is added during the cooking process to add fat and richness to the beans. The piece I'm referring to is usually about the size of a large pat of butter.

The kind that comes in a can has just enough pork in it to keep a vegetarian away but not enough that would effect the flavour.
