It depends on how close you are to the Aunt. I have some Aunts that I simply wish them the best on their birthday, I have a couple of close Aunts that I write to just like any other friend.
A simple: Best wishes on your Birthday, I hope it is as special as you are! is always nice, if a bit formal.
