Doro Wat - Ethiopian Chicken Stew and Sega Wat (Lamb Stew)
3 cup Bermuda onion, chopped finely
3 oz Butter or olive oil
1/2 tsp Cayenne pepper
1 tsp Paprika
1/2 tsp Black pepper
1/4 tsp Ginger
1 cup Water
3 lb Chicken*, cut in 1" pieces
2 cup Water
1/4 cup Lemon juice
8 x Eggs, hard-boiled
* With bones and skin, including neck and gizzards.
In a 4-to 6-quart Dutch oven or heavy stewpot:
Brown onion without fat, until quite dark, stirring constantly. Mix onion, butter/oil, cayenne, paprika, pepper and ginger. Blend the seasoning into the onions. Add 1 cup water. Soak chicken in 2 cups water and 1/4 cup lemon juice for 10 minutes. Drain the water from each piece of chicken. Add chicken to onion mixture, stirring it through. Cover. Simmer over low heat until chicken is tender. Add more water, if necessary, to bring to stew texture(or if Wat is watery, thicken with 2 tablespoons of flour dissolved in 3 tablespoons of water). Add 8 PEELED HARD-BOILED EGGS a few minutes before serving.

Ok. I am american but I will try to help. First you need to go to a ethiopian market buy some burburay and some ( dont know if I spelled it right) Injura-bread. I use steak for my beef tibs, cut into very tiny peices. Mix water and sauce together with butter let it melt butter. mix up meat in the water mix till it covers meat and use jalapenos and onions cut in strips. mix that in. dice a tomato and mix that in. I am not good with measuring things but I would say every cup of water 1 tablespoon burboray. and 2 tbl spoons or so butter. Cook on a med hi for about 20 minutes till meat is cooked and serve hot on the bread. Soak that up with the bread and oooohhh its so good and its easy to make. I honestly would go to a ethiopian store, halal market and ask more questions. Now this is spicy food so everyones seasoning portions are different. I also boil some cabbage for a side dish. Then spread the bread out on a plate and place a little bit onto the bread of each dish. Wash those hands good too, cause no utensils needed.
Oh and to the guy who said why eat ethiopian food, you must of never had it cause it is my favorite thing to eat in the world, and I have eaten many types of foods. They make great vegan dishes and meat dishes.

why do you want to cook Ethiopian. 89% of the country don't have stoves they still cook under sunlight. or fire it's like Chinese food cat coaw.
