You're going to have a little problem there with the butter. Pork has to be well cooked -- any meat has to be well cooked. And if you cook it in a skillet, the butter will turn brown and make the pork chops look yucky. Try using a little canola or something of that sort. Otherwise it sounds great!
You're a super kind of neighbor to have....

Add some pepper to those pork chops, and if you insist on using butter try a butter-flavored nonstrick cooking spray, regular butter will most likely burn. Instead of corn try a less buttery vegetable green beans perhaps? Remember your neighbor just had a baby tons of really heavy foods aren't necessarily the best thing. Brownies are never improvable, they're already awesome!

First i give you an {{ ATTABOY}}...i would beat an egg with a little water 2 spoons and dip the chops in the egg mixture and then flour both sides of chops and fry in 1/2 oil and 1/2 butter..fry til there are 1/2 done.....then remove them and sprinkle a little four in your pan over the drippings...keep cooking til it browns then add 3 cups of chickn or beef stock (broth)and keep wisking until it is smoth gravy if you need more liquid add it.season with salt and pepper to taste ..now put your chops bake in the gravy and cover with foil and bake 30 minutes in a 325 oven...the rest sounds great doing this way you got some gravy for the taters...i would serve some cold applesauce also...again that was a good thing that you did.....

Why not? If they don't like it, have them cook next time!!! But if she is breast feeding, you may want to leave out the garlic mashed potatoes and make regular. Garlic can be transfed through the breast milk and make the baby have gas and an upset tummy!

Tina,
That sounds great! That's also very nice of you. I wish you were my neighbor.
Make sure you don't overcook the chops, or they will be awful (dry and chewy).

Don't use butter. Use olive oil. Olive oil will give a unique, delicious flavor. Also the spice Rosemary will taste great.
