Apple Turnovers Ala Mama Rita

1/2 cup Butter
4 oz Cream cheese, soft
2 cup Sifted whole wheat flour
1 tbl Honey
1/4 tsp Salt
1/2 cup Diced apples
1/3 cup Brown sugar
3 tbl Flour
1/2 tbl Lemon juice
1/4 tsp Cinnamon
1/8 tsp Cloves
1/8 tsp Salt

Cream butter, honey, and cream cheese until smooth and creamy. Sift together flour, honey & salt. Work into creamed mixture with a pastry cutter until completely blended in. Form into a ball; wrap in plastic wrap and chill several hours. Preheat oven to 425 degrees. Combine apples, brown sugar, flour, lemon juice and spices. Roll pastry 1/8" thick; cut into 4 squares. Place one fourth of apple filling on each square. Fold in half diagonally and press edges with tines of fork to seal. Slit pastry with sharp knife. Place on ungreased cookie sheet and bake 20-25 minutes.

Mmm, it's the perfect time of year for apple turnovers! Here's my most favorite recipe for them :)

Apple Turnovers

1 teaspoon grated orange zest
3 tablespoons freshly squeezed orange juice
1 1/4 pounds tart apples, such as Empire or Granny Smith (3 apples)
3 tablespoons dried cherries
3 tablespoons sugar, plus extra to sprinkle on top
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Pinch kosher salt
1 package (17.3 ounces, 2 sheets) frozen puff pastry, defrosted
1 egg beaten with 1 tablespoon water, for egg wash
Preheat the oven to 400 degrees F.
Combine the orange zest and orange juice in a bowl. Peel, quarter, and core the apples and then cut them in 3/4-inch dice. Immediately toss the apples with the zest and juice to prevent them from turning brown. Add the cherries, sugar, flour, cinnamon, nutmeg, and salt.

Flour a board and lightly roll each sheet of puff pastry to a 12 by 12-inch square. Cut each sheet into 4 smaller squares and keep chilled until ready to use.

Brush the edges of each square with the egg wash and neatly place about 1/3 cup of the apple mixture on half of the square. Fold the pastry diagonally over the apple mixture and seal by pressing the edges with a fork. Transfer to a sheet pan lined with parchment paper. Brush the top with egg wash, sprinkle with sugar, make 2 small slits, and bake for 20 minutes, until browned and puffed. Serve warm or at room temperature.

The easiest thing I've found is to buy the Pillsbury turnover pastry sheets and just put your own filling in and fry them. They're just as tasty and don't make as much mess.

APPLE TURNOVERS

2 c. all-purpose flour
1 c. butter
2 apples, peeled, cored and sliced
1 tbsp. cornstarch
1 tsp. lemon juice
1 egg
1/2 c. confectioners' sugar
1 tsp. salt
1/2 c. iced water
1/2 c. sugar
1/4 tsp. cinnamon
Water

About 5 hours before serving or early in day:
1. In medium bowl with pastry blender, combine flour and salt. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Sprinkle with water. With fork, mix well.

2. Shape dough into a ball; with lightly floured rolling pin on lightly floured surface, roll into an 18 x 8 inch rectangle. Cut 1/4 cup butter into thin slices. Starting at once of the 8-inch sides, place butter slices over 2/3 of rectangle to within 1/2 inch of edges.

3. Fold unbuttered 1/3 of pastry over middle 1/3; fold opposite end over to make an 8 x 6 inch rectangle. Roll dough into an 18 x 8 inch rectangle.

4. Slice remaining 1/4 cup butter; place slices on dough and fold as in steps 2 and 3; wrap in plastic wrap. Chill 15 minutes.

5. Roll folded dough into an 18 x 8 inch rectangle. Fold lengthwise then crosswise; wrap and chill 1 hour.

6. Prepare filling: In saucepan with spoon, mix apples, sugar, cornstarch, lemon juice and cinnamon. Cook over low heat, stirring frequently, until apples are tender. Chill.

7. Preheat oven to 450 degrees. Cut dough crosswise in half; roll one half into 12-inch square (keep other half chilled); cut into quarters to make four 6-inch squares. In cup, beat egg with 1 tablespoon water. Brush mixture over squares. Spoon 1/8 of edges to seal. Place turnovers on ungreased cookie sheet. Chill while preparing other half of pastry.

8. Brush turnovers with egg mixture. With knife, cut a few slashes on each turnover. Bake 20 minutes or until golden. Cool on wire rack.

9. In bowl, combine confectioners' sugar and 1 tablespoon water; drizzle over turnovers. Makes 8.
