Oh, I have a lovely recipe, shared by a colleague... Hopefully you have access to the frozen bread dough loaves made by Rhodes (and they often have coupons in the paper!)

The recipe below is for all three bread loaves in a package, but you can divide by three if you're only making one, and even though the measurments don't come out quite even, the recipe is VERY forgiving...

Thaw 3 loaves of Rhodes frozen bread dough on the counter, covered with a damp towel (about 2 hours)

Roll out into about 1/4" thickness

In a bowl combine 4-5 Tablespoons of cinnamon with 1/2 cup sugar. Spread on rolled out dough.

Roll up and cut into 1/2" to 3/4" slices

Using two cake pans for 3 loaves, in each cake pan put:

1-1/2 cup (thats one and a half) brown sugar
3/4 cup heavy whipping cream

Mix with a fork

Spread chopped nuts (pecans or walnuts) on top of this mixture if desired.

Place the rolls into the pan on top of the nuts (approx 3 across, 4 down)

Let the rolls rise to at least double in size. After rising, bake in oven that was preheated to 350F. Bake for about 30 minutes.

Remove from oven and turn out onto a cookie sheet so the sticky stuff is on the top.

Here is the only one that I know of, at the bottom of the recipe it shows you that you can substitute the chocolate chips for cinnamon chips.

Chocolate Turnovers
Ingredients:
2 cups (12-oz. pkg.) HERSHEY'S Semi-Sweet Chocolate Chips, divided
1 teaspoon ground cinnamon
1 package (17.3 oz.) frozen puff pastry, thawed (2 sheets)
1 egg, beaten with 2 teaspoons water
1-1/2 teaspoons shortening(do not use butter, margarine, spread or oil)
Directions:
1. Heat oven to 400°F. Combine 1-1/2 cups chocolate chips and cinnamon in small bowl; set aside.

2. Unfold one pastry sheet; roll on lightly floured surface to form 12-inch square. Cut into nine 4-inch squares. Place 1 heaping tablespoon chip mixture onto center of each square.

3. Lightly brush egg mixture onto edges of each square. Fold diagonally in half; seal edges. Transfer to ungreased baking sheet. Repeat procedure with remaining puff pastry sheet and remaining chip mixture. Lightly brush tops of turnovers with egg mixture.

4. Bake 15 minutes or until light golden brown. Remove from baking sheet to wire rack.

5. Place remaining 1/2 cup chips and shortening in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Drizzle melted chocolate over each turnover. 18 servings.

VARIATION:
CINNAMON TURNOVERS: Omit chocolate chips and ground cinnamon. Use 1-2/3 cups (10-oz. pkg.) HERSHEY’S Cinnamon Chips. Reserve 1/3 cup cinnamon chips for drizzle; use 1-1/3 cups chips for filling turnovers. Follow directions given for Chocolate Turnovers.

Check out Nigella Lawsons "How to Be a Domestic Goddess" at the library. Use her Danish pastry recipe and work from there. That dough does wonders!
your local library should have a copy!
