Maple-Chipotle Barbecue Sauce

MAKES ABOUT 1 CUP
This sweet and smoky barbecue sauce is the perfect gift for die-hard winter grillers. Refrigerate it for up to two weeks.
INGREDIENTS
3 large chipotle chiles in adobo, stems discarded
1/4 cup ketchup
1/4 cup pure maple syrup
1 cup low-sodium chicken broth
1/8 teaspoon ground allspice
1 tablespoon vegetable oil
1 medium onion, minced
2 large garlic cloves, minced
Salt and freshly ground pepper
1 tablespoon fresh lemon juice


DIRECTIONS
1.In a blender, combine the chipotles with the ketchup, maple syrup, broth and allspice and puree until smooth.
2.In a medium saucepan, heat the oil until shimmering. Add the onion and garlic and cook over moderately high heat until golden, 5 minutes. Add the chipotle puree. Season with salt and pepper. Cook over moderate heat until thickened, 15 minutes. Stir in the lemon juice. Transfer to a bowl and let cool.


Chicken Rub

2 teaspoons coriander, ground
2 teaspoons cumin, ground
2 teaspoons garlic powder
2 teaspoons marjoram, ground
2 teaspoons nutmeg, ground
2 teaspoons onion powder
1 teaspoon salt
2 teaspoons thyme, ground

Mix all spices together in small bowl.
Using a whole chicken fryer, carefully separate the skin from the meat and sprinkle rub in between the skin & meat.
Gently rub the outer skin of the chicken where the spices were placed.
Refrigerate the chicken for 1 hour.
Roast in oven at 350 degrees until internal temp is 160 degrees.
If available, rotisserie chicken for 1 1/4 hours.

Dry Rub for Barbequed Chicken
Categories: Rubs
Yield: 1 servings

1/2 c Paprika
1/4 c Brown sugar
1/8 c Salt
1/8 c Garlic powder
1/8 c Dried chipotles peppers
-ground
1 tb Celery salt
1 tb Onion powder
1 tb Pepper, black, fresh ground
1 tb Chimayo red chile, ground

Mix thoroughly. To me, the thing that makes this outstanding
is the chipotles. And note that these are not the canned ones
in adobo - they're dried. This makes their smokiness a bit
more intense. You might have difficulty finding them. Look
for them in the Hispanic section of larger grocery stores.
Same with the Red pepper, use cayenne instead.

McCormick makes a really good chicken seasoning rub. I normally let the chicken thaw out a little if it is frozen, if not, just take the chicken pieces and poke little holes in it with a fork and then dip the raw chicken into a bowl full of the rub and let it marinade for 30-60 minutes or so. If you really want to juice up the flavor, you can also buy the McCormick chicken rub liquid seasoning.

Dry rub:
garlic powder, fresh ground black pepper, dill weed, and sage.
Wet rub: (but not low fat)
Melt 1 stick butter
thicken with paprika
thin with soy sauce
dip chicken pieces in rub. Grill until flesh is no longer pink.
Hint: Microwave chicken partway before grilling so the skins don't burn before the flesh cooks.

1/2 cup seasoned salt
2 tablespoons salt
1/2 teaspoon dried whole thyme
1/2 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon freshly ground black pepper

Put on chicken and put in the refrigerator overnight.

Just before grilling rub all over chicken.

If you want something premade I'd highly recommend Lawry's Steak and Chop 30 minute marinade. It's great on everything.

It's not a rub...but believe it or not, bottled Italian salad dressing makes a wonderful basting sauce for grilled chicken.

Try this...seriously.

mix pancake syrup, garlic salt, wishtishire, a tad of soysause, and for spicy add some cayenne pepper.

you take 1/2 cup of each of these items....hickory smoke powder...paprika..garlic powder..cumin...orenago.{{{{..powdered chicken base,,this subs for your salt }}}}} sugar tomato powder.....and now add 1/4 cup of these dried mustard...dried ginger...cayenne pepper...and this add 1 tablespoon ..turmeric...mix all of these together and rub lightly all over your meat......can be made in bulk and it stores well in an air tight container...happy bbqing....
