I can think of 2 things that can happen if you're working under a
car with the door open. First is that when you've finished
working and while getting out, you may knock or bum your head
against the open door. Second is that while you're under the
car, someone may get inside the car and steal your valuables
or drive it away if your ignition key is in starter position.

I think it's safer because people would notice that there is someone working on the car. If the door was closed someone might not know you're there and they could drive the car over you.

If you're on the road working on it, you should close it so it doesn't get hit by another car.

Well, I dont see any danger at all except bumping your head on the corner of the door or somewhere on the door. May hurt a but but surely wont kill you.

Wind might catch the door like a sail, dislodging it off the jack.
Always use an axel stand as well as a jack as back up, you only live once !
