Apple Pudding
"A recipe that was handed down through the years from Mother to Daughter. It's just a simple and easy 'Apple Pudding' recipe. When you are in a hurry and have very few staples on hand, you may want to give this dessert a try. That is the basic recipe and good for the times of depression when extras are scarce. Serve either hot or cold. It is good plain but better with milk, cream, whipped cream or lemon sauce."
INGREDIENTS:
6 tart apples - peeled, cored and thinly sliced
1/4 cup all-purpose flour
1 cup sugar
1 pinch salt
1 pinch cinnamon
2 cups milk
DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C).
Toss apples with flour, sugar and salt and place in a 9x9 inch baking dish. Pour enough milk into dish to come almost to the top of the apples, but not cover them.
Bake in preheated oven 45 minutes, until apples are tender. Serve warm.

I like making applesauce when I have a huge surplus of apples. Plus, you can "can" it, or put it in those glass mason jars, and then store it for later, when you're not so tired of apples.
I usually kind of "rough it" - peel and core apples into a big pot until I can't fit any more, then put water in to maybe 2/3 or 3/4, put on the stove on medium/med high, with a lid, keep checking until apples kind of mush when you squish them with a fork. Then I puree them (I do this right in the pot, with my hand blender, but you could do it in a food processor, or if you don't mind your applesauce a little lumpier, you could do it in the pot with a fork/potato masher/egg beater or something like that). Then I add - to taste, which depends a lot on the number of apples - brown sugar, cinnamon, pinch of salt (don't know why but mom told me to so I do it), dash of vanilla, sometimes a little nutmeg. You can also add other fruit for variety - a peach or two, a few plums, some cranberries.
Meanwhile, here's a recipe from allrecipes.com, which makes a much smaller amount in case you don't have TONS of apples, or you can actually multiply the recipe on the website if you do have lots of apples. You might try there to look for other recipes too. They have lots of applesauce bread recipes that I saw when looking this one up. Plus people can "rate" recipes they've tried, so you get other peoples' feedback about which recipes are super delicious.

1 teaspoon ground cinnamon
1/4 cup water
3 tablespoons brown sugar

Place shredded apples in a medium saucepan over medium low heat. Sprinkle with cinnamon, then add water and cook until the apple bits become soft and mushy.
Stir in brown sugar and mix well; if desired, top with ice cream and serve.

Apple Butter
Yield: 4-5 8 oz. jars
16 cups sliced, tart apples
2 cups apple juice or cider
brown sugar
2 tsp. cinnamon
1 tsp. allspice
1/2 tsp. ginger
Cook apples with juice until apples are soft. Press through sieve or food mill. Measure volume. To each cup of pulp add 3/4 cup sugar, add spices; mix and cook until thick; depending on variety of apples used, it will take 2-3 hours. Pour into hot, sterilized jars and seal with paraffin

Apple bread is good,
1cup sugar
1/2 c shortening
2 eggs
2 c flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt 1 tsp vanilla
1/2 c chopped nuts
1 1/2 c pealed and diced apples( any kind )
sugar and cinnamon mix
cream shortening and sugar and eggs
sift together flour, baking powder and soda and salt
add gradually to egg mixture, mix well add vanilla stir in apples and nuts, put in greased loaf pan, and sprinkle sugar and cinnamon on top.
bake at 350 for 1 hr. cool and enjoy

this is one of my own recipe i was experminting back in the early 70's and came up with this.....take and peel some of you apples and slice very thin...about like potato chips...be sure to cover in vinegar or lemon and water so they dont turn brown.....now in a glass dish square lined it with sprayed brown papper i use grocery bags cut up....now make a mixture of cinnamon sugar and butter intil it is almost a thick sauce ...oh yeah brown sugar....then on the top of this add 1 spice cake mix.......and bake following the directions on the box ..allow approx. 8 to 10 minutes longer and take out of oven after doing the old toothpick in center if clear its done....now let it set and cool for a while and then invert onto a platter and remove paper...wax paper is the best if you have it....another thing i forget its just a senior moment use apple juice in place of water in cake mix...APPLE UPSIDE DOWN CAKE...

1 t allspice
drain apples put in sq baking pan... sprinkle with oats mix.. put several pats butter on top bake at 375 fer bout 45 min til apples tender,,,,,,, serve with van ice cream or cool whip

Apple Gouda Quesadillas
Serving Size : 4
Use any type of firm red apple. Additional options: add barbecued chicken or chopped jalapeno peppers. Serve warm with sour cream, salsa, guacamole or all three.
8 (8 inch) flour tortillas
2 tablespoons olive oil
2 tablespoons Dijon mustard
2 green onions, chopped
2 red apples, cored and thinly sliced
2 cups shredded Gouda cheese
Preheat a grill for high heat.
Brush oil onto one side of a tortilla, and place on a plate oil side down. Spread about 1/2 tablespoon of mustard on the top side, and top with green onion, apple slices and about 1/2 cup of shredded cheese. Place a second tortilla on top, and brush the top with olive oil. Repeat with remaining ingredients, stacking the quesadillas on the plate.
Brush the grilling surface with oil, and place the quesadillas carefully on the grill. Grill for about 3 minutes, or until the bottom is crisp. Flip, and grill on the other side until crisp. Remove from the grill to serving plates and cut into quarters. Serve warm.

Apple Waffle-Wich
2 frozen waffles, toasted, cooled
1 slice cheddar cheese
6 slices Thin Sliced Smoked or Brown Sugar Ham
1/2 small apple, sliced
2 tsp. maple-flavored or pancake syrup
TOP 1 waffle with cheese, ham and apple slices. Cover with second waffle. WRAP sandwich in plastic wrap or foil. Pour syrup into sealable plastic container. Refrigerate until ready to serve.

"Waldorf Salad" - 4 to 6 servings
2 cups diced unpared apple (about 2 medium)
1 cup diced celery
1/3 cup coarsely chopped nuts
1/3 cup mayonnaise or salad dressing
Combine all ingredients; toss. If desired, mound salad in lettuce cups and garnish with maraschino cherries.
"Spinach-Apple Toss" - 8 servings
1 lb. spinach
2 tart red apples
8 slices bacon; crisply fried and crumbled
2/3 cup mayonnaise or salad dressing
1/3 cup frozen orange juice concentrate (thawed)
Wash spinach; remove stems and tear leaves into bite-size pieces; dry and chill. Just before serving, quarter, core and slice unpared apples into large salad bowl. Add spinach and bacon; toss. Mix mayonnaise and orange juice concentrate; seve separately to spoon over salad.
