Yes, it will still set up, but you're gonna loose alot of the creaminess adn flavor. Try using fat free and 1/3 less fat cream cheese. I have and it comes out great.

My mom makes the best cheesecake- don't use the fat-free. It just wasn't the same. A smaller peice is a better way to go- you'll enjoy it much better.
