How can I make a good spicy cheese dip with just regular cheese? I dont have any of the soft stuff.

Chile Con Queso

2 tablespoons butter
1 medium onion, chopped
1 can jalapeno peppers, chopped
1 15 1/2 oz. tomatoes, chopped, undrained
1 jar pimiento, chopped, drained
3/4 cup cheddar cheese, grated
salt and pepper, to taste
PREPARATION:
Saute onion in butter in medium saucepan. Combine jalapeno peppers, tomatoes, and pimiento with onion. Heat; let simmer for 10 - 15 minutes to meld the flavors. Add cheddar cheese, mixing thoroughly until melted.
Note: you can add browned ground beef or sausage if you'd like; and use Velveeta instead of the cheddar cheese.

SPICY NACHO DIP

1 lg. box Velveeta cheese
1/2 lb. ground chuck
1 roll "HOT" sausage
1 can Rotel tomatoes (with chili peppers)
1 lb. bag plain Dorito Chips or Nacho Chips

Brown and drain ground chuck and sausage. Melt Velveeta in double broiler; stir in can of Rotel tomatoes. Add well drained meat. Serve over Doritos or Nacho Chips.

Be advised that regular cheese dip would need a Sterno plate to keep it warm from hardening and then perhaps it may work and you can add all your spices that you want.

Personally, I would'nt waste my time doing it unless it was a very very special occasions.

I make my own I use one can of nacho cheese dip to one can of bean dip to one jar of salsa all the same oz's or as close as I can get.

you could make a rich cheese sauce and add ro-tel or hot peppers or salsa to it
