Open the doors and windows if you're going to smoke that baby indoors.
Preheat your oven to about 400. Go to the spice rack and pull Chili powder, Salt, Pepper, Garlic powder, Paprika and a little Allspice. 1/4 C Chili P and 1/4-1/2 tsp of the rest, mix them together, how's it taste? Need a little more salt? add it, should have a bit of a bite. Pull your Salmon out, shake on the mixture, rub it in a bit, oil in a hot skillet, Salmon flesh side down, SIZZLE! Give it about 7 minutes and it'll be almost burnt looking.
Flip that side up, slip it into the oven, uuummm you are useing a stainless steel pan or iron skillet RIGHT? Wow had me worried there for a minute, let her bake for about 10 minutes and your good to go. By the way, don't forget the hot pads when you grab the pan out, that smarts, bad! Mushroom Risotto and Tomatoe Mozzarella salad sound good to me. Put a dab of Pesto sauce on top of the Salmon if ya have it. Let me go wash my hands, I'll be right there

over the years i learned fish is hard to cook it all ways falls a part.
so what i have done is. I BBQ it warped in side of thin foil. first I put Little bit butter on the foil so it will not stick and some seasonings, mushrooms, some parsley and some lemon juice on the top of salmon and wrap it up, cook it for 5 10 minutes and open it cook it Little more longer and its good to go. I did this in the oven also.

Wild salmon is caught in the ocean. It's natural flavor comes through regardless of how you cook it. I steam mine until pink, and use no seasonings or spices. The natural oils are flavor enough.
Wild caught salmon is farm raised and dumped into the ocean to catch. The flavor is very dull. Bake or grill it. Use butter and dill for flavor.
Farm raised salmon is raised and caught in domestic farms. It has no flavor at all. Cook however you want. Use a wine sauce (1/2 cup of white wine, 1/4 cup of chopped onions, 1/2 teaspoon of white wine vinegar reduced down to 2 tablespoons, add a stick of butter a tablespoon at a time).

I like to cook it on the grill and I throw some wood chips to get a smoky flavor. I put down some foil so it does not fall into the grates. I like it to be one step before totally cooked so it still has a lot of moisture in it and the smoky flavor gets in there.
If I cook it in the house I will still use my broil and baste with a bit of olive oil and rosemary. Yum

Grilling salmon is my favorite way to prepare it. About 1 minute before it's done, I put a coating of honey and blackened spice on the salmon. It's excellent.

Combine a mixture of garlic and melted butter and brush over the salmon, then grill or bake. Serve with garlic potatoes and a salad. You could also use italian dressing instead of butter and garlic.

My favorite way is to season and place in frying pan with up to 1 cup water cover and steam.The salmon stays moist.Cook at med temp and watch so water doesn't evaporate completely.

I like it simple with butter, lemon, salt & pepper. put it in the toaster oven for about 20 mins. Don't over cook it.

gads my favorite food...a couple of ways I enjoy it ..best is to smoke it on my smoker, that takes salt and brown sugar in a ration of 1 salt to 2 sugar..wash the fish real well and remove any left over bones in it...oh btw I use Fillets for this..take a large skillet big enuff to hold the fillets and place one fillet in it flesh side up cover this with the salt/sugar mixture rubbing it on the meat well..place another on top of that and do the same thing..when you get to the last fillet cover all of them with a generous amount of the salt/sugar and put a lid on this..put this in the refrig for 12 hours...take them out rise them gently to get most of the mixture off them then put them on a wire rack for about an hour allowing them to dry..put them in the smoker and cook them there...I promise friends will come out of the wood work to get to them...lol...enjoy
