Dinner: whatever comfort food satisfies you. The most important thing at this stage is getting a good night's sleep. Cramming won't help you at this point, and staying up late will rob you of your ability to think the next day.
Breakfast: NO CARBS OR SUGARS!!! I can't emphasize that enough. Pancakes, sugared cereals, or sweet rolls are the worst possible things you can do. Carbs break down into sugars in the digestive system. You'll start out hyper, which is bad. Then when it wears off, you'll crash, which is worse.
The thing to eat the morning of the SAT is a high-protein breakfast. Protein is brain food. Load up on eggs, meats, beans and cheese (take Beano w/the meal or Gas-X afterward if beans cause problems for you and your vegan commitment prevents the other alternatives) Enjoy with coffee or milk (only one cup of high-test, though--better yet, stick with decaf).
I speak not only through experience as a student, but as a parent and a teacher as well. Believe me, you can't do better than this.

Fish for dinner and lots of liquids. Anything healthy.
For breakfast, high energy foods like non sugar carbs, proteins. Trail mix, fruits like bananas.
I drank a cup or two of tea. Add honey or some kind of sweetner for taste. It's good for you and the caffeine keeps you awake. You might want to bring some with you since you can drink stuff. trail mix is awesome too or any of your favorite snacks except junk food. that's garbage.
coffee is okay but is not as good for you.

Eat familiar foods. Nothing that will upset your stomach. For breakfast, be sure to eat a high protein meal, so it lasts. Bring an energy bar in case you get hungry, and a big bottle of water.
