I'm just not good with pies. Just don't have the knack I suppose. I think I'd rather do sweets anyway. Then I love to sample them.
Then I'd love to have someone else clean up for me! That's the only part I don't like.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6

1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray

Instructions:
Preheat the oven to 350ºF

Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.

Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.

Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.

Serve immediately.

Crock Pot Enchiladas
Serves 6

1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup

Instructions:
Brown hamburger and chopped onion and pour off grease.

Put all the ingredients into the crock pot. Mix and cook low 4-6 hours or on high for 2-3 hours.

Gravy Baked Pork Chops
Serves 4

4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup

Instructions:
Preheat the oven to 350º F.

Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.

In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.

Bake for 45 minutes. Serve immediately.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
3 Tbsp Brown Gravy Mix
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the brown gravy mix, diced green chili peppers, and the diced tomatoes; mix until well combined. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Invert loaf pan onto a broiler pan to allow any fat to drain off while cooking. Bake for 45 minutes.

Remove loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Strawberry Shake
Serves 2

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Whole Strawberries, garnish
2 Tbsp Sugar Substitute (recommended: Splenda)

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.

Pour into glasses; garnish each with a whole strawberry.

i love to cook this is my favorite dessert, no one needs a knack to make this: chocolate eclair cake
2 boxes (3 oz. size) instant vanilla or instant French Vanilla pudding mix
3 cups milk
1 tub (8 oz.) frozen whipped topping, thawed
1 box (16 oz.) graham crackers
Frosting - Use 1 can ready-to-spread dark chocolate frosting or try this recipe.


2 squares unsweetened chocolate
1-1/2 cups confectioners sugar
2 T. light corn syrup
6 T. butter, softened
2 tsp. vanilla
3 T. milk
Preparation -
Use a 9" x 13" covered cake pan for this recipe. Line the bottom of the pan with graham crackers. In a large mixing bowl, combine the pudding mix and 3 cups milk. Beat at medium speed for 2 minutes. Fold in the whipped topping. Spread half of the pudding mixture over the graham crackers. Add a second layer of graham crackers. Add the rest of the pudding mixture, then cover with a third layer of graham crackers. Chill for 2 hours.

To prepare the chocolate frosting -
In a medium bowl, mix all the frosting ingredients together. Beat on high speed for 2 minutes. Spread over the top layer of graham crackers. Cover the pan and refrigerate for 10 to 12 hours before serving.

I like baked goods OK, but I hate having to put them in the oven and wait...I prefer stuff cooked on top of the stove so I can stir and taste and watch it cook.

I despise yeast breads, though. I have no touch for them. I worked at Subway for a while, and I always made other people bake bread if at all possible because I'd screw up every batch of bread I baked. And the dough was already made! All I had to do was bake it! Didn't matter, though--I messed up that bread a different way every batch.

I like making pudding, sauces, soups, stews--stuff you get to stir in the pan. Cookies aren't too bad since they don't bake for very long and I don't get antsy waiting for them. But then I eat too many...one of the pitfalls of living alone. When I lived at home, I cooked for my family and now, I'm not very good at cooking for just one person. But I cook anyway--it's soothing if you get in the groove of it, get into it and focus on it. Stir, stir, stir...very Zen.

I like to cook and bake almost anything, but my favorite thing is to look in the refrig. and come up with a great creation from all the leftovers! I've actually made some pretty awesome meals that way. I can get pretty creative. My family loves casseroles so they make it easy.

I love to bake all kinds of cookies, cakes, pumpkin bread, banana nut bread, sweet potato bread, and cranberry orange bread, and lots of pies. I do bake non sweet breads, too. I also love to make fudge, and chocolate covered nuts, and pretzels. Yesterday, I made two pans of brownies. I have to wait a few more days for it to cool off before I can bake again. My next baking project is to bake triple chocolate- chocolate chip cookies, and fudge.

I like to make anything that doesn't require me to measure :-P. So baking's out for me, but I'd rather do the savory stuff anyway.

My sister is excellent with pies, she says that the secret to good pie dough is to add a teensy bit of white vinegar to the crust.

I love to cook just in general. Cooking makes me feel so good. I feel relaxed. I also like having a sense of accomplishment when I cook food for my family. What I like to cook the most would have to be, Stir-fry, anything chicken, ribs, and soup.

i love to bake,,,i esp. love foccacia and other breads. Also like making cheesecakes, cookies, pumpkin breads and pies. Today i made a banana nut bread w/ the leftover over ripe bananas.

i love to bake. pies, cakes cookies, brownies. especially holiday themed goods. only problem is i have to have somewhere to ditch the stuff--the office, friends, family, to work w/ my husband--or else i would be a cow
