Kids love the lunchables because they are fun and easy to eat... Kids like to eat little stuff. So maybe for one day have crackers (or bagels or pita pieces), cheese (or pb or tuna or chicken salad), some veggies/dip and little cut up fruit.
Try kid faves like chicken, pasta, mac and cheese, grilled cheese, hot dogs (or burgers)--go all beef... but this could get expensive, lunch meats, chicken noodle soup, tacos/burritos, pizza, cheese breadsticks, ravioli, quesadillas, make your own salad/sandwich/wrap. Make sure to get milk, a fruit, and a veggie into each lunch.
Dips are a great idea to incorporate as much as possible.

Chicken is a very price conscious food, but for 250 kids that may not be doable, depending on how much money you have alotted. Salads and wraps are definitely a good idea, and soup, you can make alot of that for a small price. Fruits and veggies are a little more expensive but definitely nutritious. Fruit salad perhaps?

Wraps are always popular...Throw some cold cuts, lettuce, tomato, cheese, etc onto a flour tortilla and roll them up. Serve them w/ chips (or pretzels), a pickle, and a cookie...Or chicken Caesar salads made individually. Warm pre-cooked/pre-sliced chicken breasts and mix them w/ Caesar salads.
