Easy Papaya Chicken Casserole

time to make 1½ hours 20 min prep
1 whole roasting chicken, cut up or 4 chicken breasts, halved
1/4 cup flour
1/4-1/2 cup butter, melted
For sauce
1 cup orange juice
2 tablespoons lemon juice
1/2 cup brown sugar
1 tablespoon cornstarch
1 tablespoon soya sauce
2 cups papayas, sliced

1. Preheat oven to 350°F.
2. Cut up whole frying chicken into pieces, or chicken breasts into halves. I like to use bone in/skin on because I think the meat is moister. I remove the skin and bones before I put the sauce over it all.
3. Dredge the chicken pieces in flour, set aside. Sometimes I use chicken coating mix, just to spice this up a bit more.
4. In a roaster or large casserole dish melt butter, dip the chicken in the butter and place buttered side up.
5. Bake the chicken for one hour or until juices run clear and the chicken is tender.
6. Carefully drain the fat out of the roaster, discard the skin and bones if necessary.
7. For the sauce: Mix remaining ingredients in a saucepan (except the papaya) and bring to a boil.
8. Once boiling and thickened add the papaya to the chicken in the roaster.
9. Pour the sauce over all, and put back in the oven for 5 minutes.
10. Let this mixture stand for 5 more minutes before serving, so the papaya can heat through.
11. If you serve this dish with rice, double the sauce recipe.

Finnish three-meat ragout
1 pound lean lamb, shoulder or leg
1 pound lean port, shoulder or leg
1 pound lean beef round
2-1/2 teaspoons salt
1 teaspoon whole allspice
1/2 teaspoon whole white peppercorns
6 large white onions, cut into 1/4-inch thick slices
Chopped fresh parsley

Preheat oven to 300 degrees F. Cut the meat into 1-inch cubes. In an enamelled, cast-iron pot or other deep oven proof casserole, layer the meat, salt, allspice, whitepe ppercorns, and onion. Cover lightly. Bake for 5 hous, or until the meat is very tender. Sprinkle with chopped fresh parsley and serve over mashed potatoes or mashed potatoes and rutabagas.

Creamy Shrimp Pesto

8 oz fettuccine noodles
3 oz four cheese sauce
homemade of purchased
3 oz pesto
homemade or purchased
20 medium tiger shrimp (sauteed in butter)

Prepare pasta al dente, drain
in lg saute pan place four cheese sauce and pesto. When sauce is warm add pasta and cooked shrimp, and toss until all pasta is coated.

Serve with a nice salad and garlic bread.

If you are not making your own sauces this is a dish that takes no longer than 15 min to prepare and it is awesome. Your guests will be impressed. Guaranteed!

the well it is as well know meal Egg rolls


you need : Egg roll wraps
Hamburger
Shrimp(tails all ready cut, and cooked)
shred cabbage or lettuce
Soy sauce( heavy salted or light)
to get the sweet part use sweet and sour sauce.

as you cook the hamburger you want to add the shrimp and the cabbage or shred lettuce then you but the stuff in a big bowl and mix well. then you sit at the table an take 1 egg roll wrap one at a time( take a spoon full of cabbage, hamburger,shrimp) and you roll them and put them spaced out in a pan. you get a pot and put oil in it let it get hot and you fry them as they are in the greases cooking you turn them until they are golden brown. YOU CAN ALSO USE NO MEAT EITHER. and if you eat a lot you should get the giant egg rolls much better. you are welcome

Ingredients:
½ Cup chopped onions
2 Tablespoons corn oil
1 Can condensed tomato bique soup
1 Pound fillet of sole or other white fish cut into pieces
1 Tablespoon ground coriander seed
1 Tablespoon lemon juice
1 Medium clove garlic, minced
1/8 Teaspoon crushed red pepper
2 Cups hot cooked rice

Preparation: Cook onion in oil in skillet until tender. Add remaining ingredients; cook over low heat 10 minutes, or until done, stirring gently now and then. Serve over rice

Ingredients:

3 ½ Cups of flour

1 Pack of yeast dissolved in ¼ cup lukewarm water

2 Eggs

½ Cup lukewarm milk

Pinch of salt

1 Stick softened butter

½ LB. Ground beef

2 Onions, chopped

1 Clove garlic, minced

1 Dried red pepper, crushed

2 Hard-boiled eggs chopped

8 pitted green olives

½ Cup raisins

Paprika, marjoram to taste

Cooking oil

1 Beaten egg

Procedure:
Place flour in a bowl, make well in center. Pour in the milk, eggs, and dissolve yeast; mix thoroughly. Add butter to obtain a smooth dough. Cover with plastic wrap and let stand for 2 hours. To prepare the stuffing: mix in the meat, onions, garlic and red pepper. Heat 2 tablespoons oil in a pan and cook the stuffing in it. Let it cool and add the chopped eggs, olives, raisins, paprika and marjoram to taste. Roll out the dough to a quarter inch thickness as if you were making a pie. Cut circles 4 inch diameter. Cover each half-circle the stuffing; brush the edges with the beaten egg. Fold each circle in two and press sides. In a pan, brown turnovers.

Vietnamese Salad

Ingredients:

11 Ounces cooked shrimp, peeled

7 Ounces cooked skinned chicken breast

2 Ounces bean sprouts

2 small carrots

½ Cucumber

Coriander leaves

¼ Crushed peanuts

2 Tablespoons lemon juice

Pinch of sugar

2 Tablespoon soy sauce

Salt and pepper
Procedure:

Boil the water, add bean sprouts for a few seconds only. Drain and let cool. Peel the carrots and the cucumber. Grate the carrots. Cut the cucumber into thin slices. Cut the coriander leaves. Mix the lemon juice, sugar, soy sauce, salt and pepper in a bowl (dressing). Arrange the vegetables and coriander on a dish and cover with your dressing. Dice the chicken arrange it with the shrimp on the dish. Garnish with coriander leaves and crushed peanuts

Jerk chicken with sweet potatoe fries
INGREDIENTS :

1- 3lbs chicken
Jerk Sauce
lemon or lime juice

METHOD:

Clean, skin,and cut chicken in medium pieces,then wash with lime or lemon juice
Rub the chicken with the Jerk seasoning.
Be sure to rub under skin and in cavities
Marinate overnight.
Grill at lowest possible setting over a low fire until done.
Pimento (all spice) branches (this is what is used in Jamaica) mixed with charcoal is best. If not try to use an aromatic wood in the barbecue grill to enhance the flavor.
Chop meat into pieces, and serve traditionally with hard-dough bread
for the sweet pottaoe fries, cut 5 sweet potatoes into wedges, season with blaack pepper and cinnamon, coat a bake pan with extra virgin olive oil or peanut oil bake until crispy about 10-20 minutes and enjoy. Hope that helps

i'm so fed up with english food its untrue-but it probably has something to do with the fact that I'm English
Perhaps in my next life god will take pity on me and save me from the disgusting lamb roast dinners and bacon fry ups that I have to endure.
