on a griddle...
butter one side of each slice of dark rye bread and place them butter side down on the griddle.
on the side facing upwards spread about a tablespoon of thousand island dressing on each slice then put a slice of swiss cheese on each slice of bread.
place about an oz. of saurkraut and about 4oz. of corned beef thinly sliced seperately on the griddle....heat thoroughly...then place the corned beef and the kraut on one of the slices of bread...the swiss should be melted by now....and cover with the other slice of bread....
there you go....

Thousand Island Dressing
Grilled Pastrami
Grilled Sourkraut
Melted Swiss or Provolone on top
(Make a sandwich)

Many people have given you the correct answer, but something to note: Pick a hearty and flavorful rye or pumpernickel. Do not buy generic for a reuben. Also, make sure your corned beef is sliced thin and don't be bashful with the thousand island dressing. I'm a chef and I could give a group of apprentices the list of correct ingredients, but I guarantee that their sandwiches will taste different......remember it's quality of ingredients and method of preparation, which includes quantity of each specific product.

Sliced dark or swirl rye bread...toasted. Then a heaping serving of hot sliced corned beef with melted Swiss cheese. Sauerkraut and some use either spicy deli mustard or thousand island dressing.
I love this sandwich but I add tomatoes to mine.

Boy, it's been a long time since I made one of these...
"Reuben Sandwiches" - 6 sandwiches
1/3 cup mayonnaise or salad dressing
1 tablespoon chili sauce
12 slices rye bread
6 slices Swiss cheese
3/4 pound cooked corned beef; thinly sliced
1 (16 oz.) can sauerkraut; drained
Butter or margarine; softened
Mix mayonnaise and chili sauce; spread over 6 slices bread. Arrange cheese, corned beef and sauerkraut on mayonnaise mixture; top with remaining bread slices. Spread top slices of bread with butter.
Place sandwiches, butter-sides down, in skillet. Spread top of bread with butter. Cook uncovered over low heat until bottom is golden brown, about 10 minutes. Turn; cook until golden brown and cheese is melted, about 8 minutes longer.
("Rachel Sandwiches": Substitute 1 1/2 cups coleslaw for the sauerkraut and thinly sliced cooked turkey or chicken for half of the corned beef.)

Make it like a grilled cheese.
Butter 2 slices of Rye bread. Place corned beef and swiss cheese on one slice of the bread and place in a hot skillet , top with other slice of bread. Cook until browned.
Remove to plate.
Then in the same skillet, warm some sauerkraut, remove one slice of the bread and top with sauerkraut and Thousand Island dressing. Replace bread and enjoy.

I butter rye bread (w/o caraways seeds, don't like them) and pile high some corned beef, saurkraut and swiss cheese and then another slice of butter rye bread. Some people add salad dressing. I've seen 1000 Island and French used. Then just toast the bread on both sides until browned and enjoy.

A reuben is made of corned beef (thinly sliced), sauerkraut, Swiss cheese, thousand island dressing and usually a rye bread. It should be hot. Take a griddle and butter one side of each piece of bread, then put the buttered side down on the griddle. Then take two slices of cheese and put one on each slice of bread. Then take the 1,000 island dressing and spread a little on one slice of cheese. While that is browning, take a small amount of sauerkraut and 5 slices of corned beef and place them on the griddle separately, and grill the sauerkraut till lightly browned and just enough to warm the beef. Then take the meat and put it on one of the slices of bread and then top with sauerkraut. Then the other slice of bread/cheese and put it on top of the sauerkraut and presto a Reuben Sandwich!

Reuben Sandwich II
INGREDIENTS
2 tablespoons butter
8 slices rye bread
8 slices deli sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained
1/2 cup thousand island dressing
DIRECTIONS
Preheat a large skillet or griddle on medium heat.
Lightly butter one side of bread slices. Spread non-buttered sides with thousand island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.
Grill sandwiches until both sides are golden brown, about 15 minutes per side. Serve hot.
Reuben Sandwich I
INGREDIENTS
8 slices rye bread
3/4 cup thousand island dressing
1 (16 ounce) can sauerkraut, drained
8 slices Swiss cheese
8 slices pastrami
1/4 cup margarine, softened
DIRECTIONS
Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.
Heat a large skillet over medium high heat. Grill until browned, then turn and grill until heated through, and cheese is melted.
The Real Reuben
INGREDIENTS
2 slices dark rye bread
1/4 pound thinly sliced corned beef
3 ounces sauerkraut, drained
2 slices Swiss cheese
1/4 cup thousand island dressing
DIRECTIONS
Place bread on baking sheet or broiling pan. Layer corned beef, sauerkraut and cheese on top of bread slices.
Broil on high heat for 3 to 4 minutes, until cheese has melted. Serve hot with Thousand Island dressing.
