The White Heart in Lewes seems to be a popular hotel, you could try them or Newick park where most weddings of any note are held.

Newick Park is a good one. They do the entire Wedding if you wish and are able to put up the Bride and Groom and will also cater for Guests to stay on overnight after the reception.
Buxted Park does wedding packages too, but they sometimes have two weddings booked (in different rooms) but Guests can get mixed up with each other's "do."

The cost depends on the time of year you are travelling so that will affect the per night cost. If you are looking at $200 per night there are several hotels in the area that are decent. Some of them are (lowest priced to highest): Sandman Downtown - 1 block from GM Place The Georgian Court - Again about a block from GM Place Hampton Inn Downtown - Close to GM Place as well These and several others come in at less than $200 per night currently. If you are interested in the Robson Street area there are several there that also come in at under $200 per night.

Shelleys Hotel in Lewes- very nice- http://www.shelleys-hotel.com Try the four poster room! expensive though.
