a steamship round where i learned is part of the hind quarter of the beef and using weighs above 25 lbs and is cooked in a slow oven for about 14 hrs and then the chef slices the whole round for the guest it is used a lot at banquets ...and buffets it would be hard to marinate but if yiu had an injector you could inject it.....

Decide what type of marinate you want to put on your round. Cover it with the marinate, put in the refrigerator covered with tin foil. Turn/flip it every 3-5 hours, whenever possible. Bake in a preheat oven at 350 degrees approx 2-3, or until internal temp is 140 with a meat probe. Remove and let sit for 30 Min's. For those that do not know what a Steamship Round is: A steamship round is a beef roast that consists of a whole round with a rump and a heel.

Salt,pepper,minced garlic,rosemary and olive oil. Make into a paste and rub on to meat.Let stand for an hour, then roast to your desired temp.
