Pre-heat oven to 375
cut in half top to bottom - remove seeds
Place face down in a baking dish w/ 1/4 "of water in it
bake for 30-40 minutes until almost tender
flip over add butter brown sugar cinnamon and or nutmeg cook until done-
The water method basically guarantees that the squash will be cooked and eliminates the possibility of burning the sugar.

We love it and buy when it is in season, mash it, freeze it in serving portions to eat all winter long. Here is what we do: Punch holes in it so steam can escape; Put one in the microwave; Cook on high for about 8 to 10 minutes; Let cool enough to handle; Cut open and spoon out the squash. We like to add butter and a little maple sugar to ours. OR butter and brown sugar. OR eat by itself with no additives. If you buy small sizes, you can put two or three in your microwave at the same time. But if the acorn squash is BIG, only cook one at a time.

Sausage stuffed acorn squash


2 acorn squash
1 Tbs olive oil
1/2 cup sausage meat, removed from the casing
1 cup sliced shiitake mushrooms
1/2 cup sliced onion
1/4 cup dried apricots, diced
1/4 pine nuts, toasted
1/4 cup maple syrup
2 Tbs bread crumbs
2 Tbs grated Parmesan
1 tsp dried thyme
1 tsp dried sage
Salt and pepper to taste

Preheat the oven to 350°F (160°C).

Warm up the olive oil in small skillet over a medium heat. Add the sausage and cook until it has browned, about 5 minutes. Remove from heat and coarsely chop sausage, if needed. Set aside in a bowl.

Place the onions in the skillet and cook them for approximately 5 minutes, until tender and golden in color. Remove from heat, and add to the bowl with sausage.

Cook the mushrooms in the skillet until they are golden brown, place them into the bowl.

In the large bowl mix the mushrooms, onions and sausage. Add in the apricots, pine nuts, maple syrup, bread crumbs, Parmesan, thyme and sage. Toss well, and salt and pepper to taste.

Halve the acorn squash, removing the seeds and strings. Place stuffing inside of the halves. Pour a half cup water into the baking dish and bake for 45-60 minutes or until the squash is tender.

Acorn squash is delicious. You can cut it in half, scrape out the seeds, put in some butter, honey or brown sugar, and walnuts, and bake in the oven uncovered until soft. Or you can peel, very hard to do, then cut into pieces and steam with a collander in water. You can also boil the pieces, but this makes it waterlogged and not very tasty. The first way is the best.

When I'm running low on time I cut them in half, seed them, fill with a little butter and brown sugar, cover with wax paper and cook in the microwave for 5 minutes. Still tastes like baked acorn squash.

I also cube it, boil it and serve with dirty rice and ground beef.
Sometimes I put it in stir fry too.

Cut them in half (carefully!) and scoop out all the seeds with a spoon into the garbage. Put salt, pepper, and pats of butter in the middle and cook at 425 for about 30 to 40 minutes. Poke with a fork and if it slides in without resistence they are done. Let cool a little and scoop out of skin into a bowl. Add more butter and yummo.

This way is good:
Cut it in half (lengthwise) and remove the seeds and stringy stuff. Put about a tablespoon of brown sugar in each half and top each lump of sugar with about a tablespoon of butter. Put in a baking pan, cover with foil and bake about an hour to an hour and a half at 350 degrees. Bon Appetit!

all the ways everybody else mentioned are good.

i also like them these ways -
- cut in half, remove seeds and bake with a bit of orange juice or apricot nectar in the centers - and some nuts - the juice is a natural sugar and adds a nice flavor

- or cut in cubes and baked with cubed carrots and some dried apricot or mango - basted with oj - and butter if you want

- or cut in cubes and grilled or roasted with mirin (sweet japanese rice wine) and soy and hot sauce - esp. if you keep 'em in still they start to brown a bit - yummy

- or cut in cubes and grilled or roasted or broiled or baked with
rosemary & olive oil and a little salt

- or cut in cubes and slid on to shish-ke-bob (sp?) sticks with other veggies and meats - all different sorts of marinades work for this - i like a combo of hot sauce, soy sauce, rice wine & sugar

- they can be good in soup too-
saute onions, garlic & celery in olive oil and butter (a little of each)- when nice and brown add some sliced carrots and cubes of acorn squash, you can add various other veggies for flavor too - add pepper - maybe cinnamon or nutmeg, maybe some paprika or cayenne - then if you want you can blend - possibly with some in some half & half or yogurt or cheese (gruyere is good) - or just as is. lots of variations.

- good in stir fry too - but someone already said that.
