Your brother already has wine, coffee, wine openers, Champagne and glasses, possibly better ones that you might purchase. A wallet is to personal.
Buy one good bottle of Cognac like Remy Martin. Go into a wine/liquor store and they'll help you. It WILL be welcomed and he'll really appreciate such a thoughtful gift.

Buy them a wine-drinking set, perhaps -- glasses, corkscrew, those little wineglass "necklaces" that help drinkers remember which glass is theirs, one of the racks that lets you pour from the wine bottle without holding the wine bottle (prevents transfer of heat from your hands), etc. You could probably visit a kitchen-supply store if you don't have a specialty wine shop nearby. I'm thinking a place like Linen's N Things would have some of this.
Or, you could make up a coffee gift basket -- get a few pounds of varied coffees from Starbucks or some place like that, a bean grinder if you buy whole beans, coffee cups, flavored syrups, biscotti. Or, if you want to go high-dollar, you could get them a cappuccino maker or one of those coffee makers that grinds the whole beans then brews the coffee all on one machine. My dad has one, and it makes GREAT coffee.
You could also do a "thank you" basket of a combination of wine accessories and coffee-drinking stuff.

Try a silver picture frame 5x7. During the week, take lots of pictures of you with them. Then have a 5x7 of your favorite one made and put that in the frame. Be sure to write a lovely note telling them how much your time there meant.

How about a large gift card to a gourmet coffee place, like Peet's Coffee, so they can get fancy coffee/beans? It'll be easier for you to pack than an actual gift.
Or chocolate-covered coffee beans, very popular? Or coffee mugs featuring their favorite whatever?

A card for sure, myself i will usually have them come with me to the store then i involve them asking what the would choose on a lot of stuff getting all theyr choices it makes for enjoyable meeals together while you are staying its allways worked for me
