It depends on what kind of mood I'm in. If I am in a hurry I just walk past and don't say anything. If i don't feel like talking I say no thanks. If I feel like debating I will talk to them. If I feel impish I will extend my hand, and when they give me a book immediately toss it in the trash right in front of them. It all depends on my mood.

I generally either tell them, "I'm not interested, thank you" as I pass by, or take the pamphlet but don't stop and talk. If I do take the pamphlet, I generally will read it to see what it has to say - knowledge is always a good thing.
We had some folks handing out copies of the Watchtower door-to-door a few weeks ago, and I took their information and told them that I believed in a Higher Power, and that I was always interested in learning more about the beliefs of others. I do wonder, though, if THEIR reaction would have been different had they been able to see my pentacle necklace.

They make me VERY ANGRY< but I am a grown-up, so I am polite.
I hold my hand up like "stop", smile and say, "no, thanks!" and keep moving. If they say or do anything else to me, I report them to the store for soliciting. It is illegal.
Don't waste your time reading the mormon propaganda. They are loonies. And of course, they are nice-they want you and your life and money.
You want to know something, go to beliefnet and answer the questions about what you already believe, and where you are on your journey. No strings attached.

I never take the pamplets I just say no thanks. They are just nice people trying to support there religions give them a break.

I love it when they do that. I explain to them very nicely why their religion is nonsense, and has been proven false.
To date, I have yet to meet one that even attempts to argue with my logic. They usually back away smiling and nodding, and saying they hope I find my way, etc.
It's actually rather funny to see how alarmed they get when they realize they've gotten in way over their heads.
