I was wondering how many times the same pot of melted chocolate could be melted, hardened and remelted untill it can no longer be used.
What happens to it? taste change? texture change? etc...
Im wondering because I would like to try making chocolates for christmas, but wont be able to make it all in one day, so I was wondering how long I could use the chocolate untill it goes "bad".

it all depends how much dairy is in it and what type of sugar is used. milk chocolate will not last as long and chocolate that is sweetened with cane sugar will crumblw sooner than european chocolate.

You don't add anything to tempered chocolate. When you melt chocolate to the correct temp it will harden in the same way it was when you melted it. The challenge is not to melt it to the point it breaks. Where the fats separate. You can then melt it repeat idly. The temp shouldn't be more than 80 or so degrees. Then it will re harden when it sets on or in whatever mold you use.
