One of the easiest but tastiest dishes I make - "Poulet Ole". Slice boneless chicken breast into strips and shake in a bag with some flour and black pepper. Saute in a bit of oil. Add fresh tomato wedges (about 8 wedges to a medium size tomato) and half a cup of sliced green/pimento olives. The olives mix with the flour on the chicken so make a fabulous sauce. Serve over rice. Rice takes 25 minutes to cook but you can make the chicken in about 15!

Well, It seem to be the same thing at my house but since i seem to be the oldest person at my home i have to make and cook all the food. But a easy fast thing to make is BLTs. ( Bacon Lettuce Tomato). All you do is toast two pieces of bread and fry some bacon cut up some tomatos and get lettuse and combine them all together and you will have a genuine BLT>

I just made this,it's a basic recipe and you can add whatever you want.
Green chile Chicken Enchilades
1 can of green chiles
1 package of cream cheese
Tomatoes
chicken
enchilada sauce
tortillas
shredded cheese
Cook chicken then shred,add to pot with diced tomatoes,green chiles and cream cheese. Cook until cheese is melted. And chicken cream cheese mixture to tortillas until mixture is gone. Put enchilada sauce over tortillas,sprinkle with shredded cheese,bake for 15 minutes.

Into your soup-bowl:
Break a pkg. of Top Ramen (or other brand)
Sprinkle in seasoning packet
Dollop of crushed garlic (jar)
Pinch of crushed red pepper (dried)
Handful of chopped cooked chicken
1 cup water
Microwave on HIGH 5 minutes; stir. Sprinkle with sliced scallions and serve.

fast and easy but very yummy...
sizzlin shrimp-
1/2 stick butter
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp curry powder
1/2 tsp dried oregano
S&P to taste
1 lb shrimp, shelled and deveined
Melt butter. Mix spices in butter. Dip shrimp in mixture until well coated. Grill on a sheet of foil or broil in oven until golden brown.

Baked Salmon-
1 Salmon steak, can cut into cubes, portions, or leave whole
Spicy mustard
parsley flakes
bread crumbs
Spray bottom of pan. Place steak in pan, skin side down. Spread mustard generously on salmon. (top and sides) sprinkle w/ s&p, parsley to taste. Cover in bread crumbs. Bake at 400* for @10 min or until done. (can substitute mustard for creamy caesar dressing. If doing so, add basil and parmesan to breadcrumbs)

chicken fingers on a stick-
4 boneless skinless chicken breast halves, pounded to 1/2-3/4 in thick
salt & pepper
24 (10in) bamboo skewers, soaked in water for 30 min.
3 TBS oil
2 TBS barbecue sauce
1 1/4 c bread crumbs
Cut each chicken piece lengthwise into 1/2 inch strips and sprinkle with s&p. Fold the strip slightly and weave them onto skewers. Prepare grill, close lid and heat until hot. In a small bowl, stir together the oil and the barbecue sauce. Spread the bread crumbs on a sheet of wax paper. Lightly brush the sauce mixture over the chicken strips and then roll them in bread crumbs. Grill until no longer pink inside, about 2-4 min. per side (on gas grill) Serve with the dipping sauce of your choice.
(I like to substitute BBQ sauce and oil for ranch dressing. You don't have to skewer them and you can then bake at 400 for 20 min or so)
