Garlic bread is the perfect side for lasagna, but if you're feeling adventurous you can try Caprese salad. It's fresh mozzarella, olive oil, balsamic vinegar, and roma tomatoes sprinkled with oregano and a pinch of crushed black pepper. Buttered peas, asparagus, and/or French-cut green beans are also feasible. Since lasagna is a three course meal on its own, you don't have to get too crazy with the sides. Bon apetit!

Looks like you have received a ton of good answers. My vote is to have a good salad or vegetable with your lasagna. Crusty bread is always a good side with pasta, but fresh broccoli, asparasgas, spinach, peas and carrots, green beans, would be some of my choices. Garden green or spinach salad as an option, but with the salad/ spinach scare in the states, I think I'd wait awhile with serving spinach!

Marinara Sauce / Spaghetti Sauce Via Bari, Italy
2 tablespoons olive oil
2 garlic cloves, fresh & sliced super thin
28 ounces crushed tomatoes (Redpack brand)
1 1/2 teaspoons dried oregano
2 teaspoons sea salt
1/2 teaspoon pepper, freshly ground
In a 4 quart pot heat olive oil on medium heat and add THINLY sliced fresh garlic. Saute until garlic becomes very lightly golden on edges. If garlic burns, discard and start again as this definitely affects the taste in a negative way.
Add can of crushed tomatoes. Tomatoes should be slightly chunky and not a puree. Turn heat up just a bit until mixture starts to bubble up, but not boil.
Place dried oregano in palm of one hand and use other to crush it over the pot. Add in salt and pepper and stir.
Lower heat to medium-low and cover pot, simmering for 20 minutes. Check occassionally to stir. Enjoy immediately.

The obvious answers are garlic bread and a garden salad. However, if you are looking for a hot veggie, what about Italian pole beans for a fresh flavour and contrast in colour? If you can't find pole beans, get some fresh green/string beans, cook/steam/blanche/whatever them until they are slightly soft, and sautee in some olive oil and garlic. Try a fruit sorbet for dessert!

Italian Cream CakeTry this layered Italian dessert - it has coconut flakes in the batter and the frosting.Ingredients:
• 1 cup buttermilk
• 1 teaspoon baking soda
• 1/2 cup butter
• 1/2 cup shortening
• 2 cups white sugar
• 5 eggs
• 1 teaspoon vanilla extract
• 1 cup flaked coconut
• 1 teaspoon baking powder
• 2 cups all-purpose flour
• 8 ounces cream cheese
• 1/2 cup butter
• 1 teaspoon vanilla extract
• 4 cups confectioners' sugar
• 2 tablespoons light cream
• 1/2 cup chopped walnuts
• 1 cup flaked coconut
Method:
1. Preheat oven to 350 degrees F (175 degrees C). Grease three 9-inch round cake pans. In a small bowl, dissolve the baking soda in the buttermilk; set aside. 2. In a large bowl, cream together 1/2 cup butter, shortening and white sugar until light and fluffy. Mix in the eggs, buttermilk mixture, 1 teaspoon vanilla, 1 cup coconut, baking powder and flour. Stir until just combined. Pour batter into the prepared pans. 3. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. 4. To Make Frosting: In a medium bowl, combine cream cheese, 1/2 cup butter, 1 teaspoon vanilla and confectioners' sugar. Beat until light and fluffy. Mix in a small amount of cream to attain the desired consistency. Stir in chopped nuts and remaining flaked coconut. Spread between layers and on top and sides of cooled cake.

Pasta Salad:
1(8oz)pkg spiral pasta
2 cucumbers-thinly sliced
1 onion-thinly sliced
5 tomatoes-cut into bite side pieces
1 1/2 c sugar
1c water
1 tsp salt
1 tlb sp Accent
1 tlb sp parsley
1/2 tsp pepper
1/2 tsp garlic salt
1 tlb sp prepared mustard
Cook pasta,drain and rinse in cold water;stir together pasta.cucumber,onion, and tomatoes;inseperate bowl mix remaining ingredients and pour over pasta mixture(let stand for a few hrs before serving.)

Gotta go with salad on this one. Try a ceasar salad since it has that Italian taste to it. And don't forget the garlic bread (or make cheese bread with mozzerella cheese).

I love eggplant lasagna.It is very good.I like to have Roasted Asparagus served right along with it..Just buy fresh asparagus,nearly every grocery store has them over with the vegetables,like the lettuce and such.Just simply drizzle some extra virgin olive oil over them,salt and pepper them and you simply place them in the oven on a low-medium low temperature and let them roast slowly.They will get very tender,and start to get some color to them.They are absolutely delicious,inexpensive,and good for you!!!! P.S.This is my all-time favourite meal.For dessert i would serve some sorbet(Your choice on the flavour) with some nice fresh mixed berries over them(Personal choices:Black berries and raspberries).The drink i would have would be fresh lemonade!! Yummy!
