cook a steak well done and so tender that it practically falls apart? I had one some years ago and never have been able to find anyone else who knows how it's done.

Cooking tender meat is like driving in heavy fog low and slow.

Marinate the steak with any meat tenderizer that you find in the meat department. Wrap in foil with some onion & mushrooms if you like and bake at 325 degrees for about an hour.

Season the steak however you want to.
Wrap the steak in aluminum foil.
Slow cook in oven (four hours or so at 225 degrees).
CAREFULLY unfoil the steak and sear both sides on the grill.

The marinade is a good idea. But definately slow cook. I like to put mine in a pan (line it with foil) and then cover the pan with foil to hold in the moisture. Cook no hotter than 300 and for a long time.
Good Luck.

The trick is in the marinade..... The longer you let it sit in marinade, the more tender the beef gets... When making fajitas, I like to marinade the meat in Italian dressing for 24 to 48 hours...

Then cook slowly over a low heat....

Low and Slow, as in I put it in a crockpot, and it literally falls apart. Cook with cream of mushroom soup or something of that nature.

Let it marinate over night and then cook it slowly, very low temp. Doesn't matter how. (BBQ, oven, stove top). Should cook for at least half an hour or more. (I prefer the BBQ)
