More area of cheesy goodness that touches your tongue? Otherwise, it might just be psychological!

Marshmallows Roasted Apples - (Cut the cores out of fresh apples and try not to poke the peel on the bottom. Fill the middle with cinnamon, brown sugar, raisins and nuts if preferred. Wrap in aluminum foil and heat over the fire. When heated open up the gooey treat and eat it with a spoon). Roasted Chestnuts Hot Dogs Burgers Chicken Gooey Bananas - (Leave the banana peel on and with a knife, cut a slit from top to bottom, but don't cut all the way through. Open the banana slightly to put one or two pieces of chocolate (or chocolate chips) inside and then top that with small marshmallows. Wrap it up in aluminum foil and heat over the campfire).

It might be because you are increasing the surface area of the cheese allowing more contact with you taste buds. Certain areas of the tongue are used to taste different flavors of food. "Sweet" foods are tasted at the tip of the tongue, "salty" foods on the top sides of the tongue close to the front and "bitter" tastes are sensed towards the back top area of the tongue- perhaps as a defense mechanism that helps trigger a gag reflex if the food is bad...
Sense cheese can have all of these flavors, by pulling it you are allowing more contact between cheese and taste bud surface areas of your tongue.

I doubt the actual flavor is different, but it sure is more fun to eat that way. I'm pretty confident that it's more of the hands on and/or texture experience that makes the event of eating string cheese so entertaining. The shape that mozzerella(string) cheese is eaten has zero effect on the flavor.

Per my kids
"The inside tastes better than the outside"
(thus they pull it in strings)

When you have fun woth your food for some reason it just tastes better. I think a sloppy joe just wouldn't taste as good if i had to eat it with a fork!

There's more surface area, and the thinner piece starts to melt faster, so the fat flows across your tastes buds faster.

Because it's in our minds that that is the way your supposed to eat it, so any other way would feel or taste differently to you, even tho it doesn't.
