It all depends on how big the mapped area is, how big the paper is, and what the scale is! You could have a map drawn TO SCALE of the entire world and have it be the size of a postage stamp. Alternatively, you could have a map of my backyard that is ten pages long. We need more details in your question. You have left open all of the variables; a proper answer would only allow one variable.

If you mapped a 8.5 x 11 area to exact proportions, it would take one standard piece of copy paper. From there, you could calculated how many pages an 8.5 x 22 or 17 x 22 area would take.

If it was scale 1:1 then it would be actual size.
You could then cut it up to make into a book but the number of pages would depend how big you cut it.
