Wondering what people like or use? I use Henkels, but gonna have to try Globals one of these days.

I believe that different makers have different top performers. I use Wusthoff for my Chef's Knives and Slicers. Global is a great Offset Handle Knife and Cleaver as well. Beleive it or not my favorite chopper is one of those nutty Ron Popeil Knives from TV. Get a feel for them and don't feel tyou need to commit to 1 brand.

Henkels professional S series! The handles are ergonomically designed. Instead of fitting longwise in your hand like a normal handle, they fit more flat. The tank runs horizontal instead of vertical in the handle. Best I've ever used! Take a peek at them at William Sonoma.

I did a lot of extensive research on mine before buying in the early summer. I came down to Henkels, Wusthoff, and Cutco. In independent reviews and blogs by former Cutco sellers, they were the first to leave the list. After that, Henkels and Wusthoff. Both seemed compatible...until I found the Pro S series. That was the clear winner.

Henckels is a good name, and the only one which comes to mind right away. I`d suggest going to a small store which specializes in kitchen stuff, or a restaurant supply house. They are unlikely to carry anything which isn`t good. Don`t let anyone talk you into buying a whole set, though when you see the prices you probably won`t be very tempted anyway. Just think carefully about which knives you really use a lot and make sure those are good. I use one small chef knife for just about everything, and have a larger one which I only use for cutting whole cabbages and such. Whatever knife you buy, also buy whatever they recommend for keeping it sharp and learn how to use it. No knife stays truly sharp for very long, and once you get used to using a really sharp knife, you`ll sharpen it often. My favourite and most-used knife is a no-name I got in a thrift store about 20 years ago, and it gets sharpened at least once a week.

Wusthof Tridents. I've had my set for 12 years now, and they still look new and hold a perfect edge. I also use a Kyocera ceramic knife for delicate work. Most knives today are very well made. The biggest factor is finding a handle and weight you like. Also, learn how to properly care for your knives, (no dishwashers and no machine sharpening) and they will last a lifetime.

Wüsthof-Trident of America Classic Series
All but a lone tester ranked this among their top 3 choices. Moderately heavy, it "feels just right in the hand" and was deemed "perfect" at performing task after task, from cutting ribbons of basil to cubing beef for stew.

I Love these knives, I couldn't imagine my kitchen with out them!

Check out a company called Cold Steel. They make awesome knives of the highest quality. Get free DVD of them demonstrating the astounding reliability and durability of their knives. They torture test them too. Very interesting video. Outstanding Knives. That's Cold Steel !

I like either Chicago Cutlery or Cutco knives with non-serrated blades.
