Fairy Cakes
Makes 24 mini cakes or 12 larger ones.
For mini cakes you will need a 12 hole tartlet tin (these are 5cm at the rim and 1 1/2 cm deep) and you will need to use it twice. For larger cakes use a 12-hole bun tin (these are 6 1/2 cm at the rim and 2cm deep). You can use the little paper cases according to the size tin you have. If not, butter the base and sides of the holes before filling with the mixture.
125g / 4 1/2 oz softened butter
125g / 4 1/2 oz caster sugar
2 eggs, lightly beaten
1 tsp vanilla extract
125g / 4 1/2 oz self-raising flour
2 tbsp milk
Preheat the oven to 190C/375F/Gas mark 5. Either butter the tin or place the paper cases in the holes (see above). In a mixing bowl beat the butter and sugar until pale and fluffy. You can use an electric whisk or a wooden spoon.
Add the beaten egg, a little at a time, whisking to incorporate, then beat in the vanilla.
Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined.
Spoon into the tin and bake for 12 minutes or until risen and golden on top. Allow to cool for ten minutes on a rack before removing from the tin.

Fairy Cakes

1 hour 40 min prep
1/2 cup unsalted butter, softened
7 tablespoons sugar
2 large eggs
3/4 cup self-rising cake flour
1/2 teaspoon vanilla extract
2-3 tablespoons milk
Icing
1 cup powdered sugar
1 egg white
3-4 drops lemon juice
food coloring
Preheat oven to 400 degrees F.
Line a 12 cup muffin tin with baking cups.
Put all the ingredients except for the milk into a food processor and blend until smooth. Pulse while adding the milk down the funnel to make for a soft consistency.
It doesn't seem like enough, but you can get enough into each baking cup, just scrape it all out and try to fill each one equally.
Bake for 15-20 minutes or until they are golden on top.
Cool on a wire rack, but remove from the tin as soon as possible.
Before you decorate, slice off any mounded tops so you have a flat surface to decorate. Icing: Mix the sugar, egg white and lemon juice in a small bowl until smooth and creamy, it should have the consistency of heavy cream cute!

For the sponge
4 free-range eggs
225g/8oz sugar
225g/8oz self-raising flour
225g/8oz butter, melted
For the icing
170g/6oz icing sugar
110g/4oz butter
55g/2oz cocoa powder, sifted
To decorate
white chocolate buttons
milk chocolate buttons
Method
1. Preheat the oven to 180C/350F/Gas 4 and prepare two 12-hole tartlet tins with fairy cake cases.
2. Whisk together the eggs and sugar until light and fluffy.
3. Gradually add the flour and the butter, folding the mixture together gently.
4. Pour the mixture carefully into the fairy cake cases.
5. Bake the cakes for 10-15 minutes, until golden on top and a skewer carefully inserted into one of the cakes comes out clean. Allow to cool for ten minutes on a wire rack before removing from the tin.
6. To make the icing, whip together the icing sugar, butter and cocoa powder.
7. Once the cakes are cool, ice them liberally.
8. Decorate the cakes with chocolate buttons,

Use a basic sponge mix - weigh your eggs (3 eggs usually) and weigh your other ingredients (granulated sugar, marj, SF flour) so they are the same quantity. I like to put a bit of vanilla essence in there too to deepen the flavour.
Whisk the marj and sugar together, then slowly beat in the egg. Once this is added, fold in the flour. Add it gradually and mix it in to make it easier on yourself. Licking the bowl is optional!
Put into cake cases and in a preheated oven (gas mark 7, dont know the electric - sorry!) for approx 25 minutes.
PS: My grandmother also swears that the success of her sponges is that all the ingredients weigh 7oz each!

50g fresh fairies (frozen can be used but not recommended)
I beaten egg
25g Elven creatures
5tblsp Unicorn urine
Mix above ingrediants in food processor
season with angel dust (NOT PCP)
Bake in over at 180 degrees for 20-25 minutes

These are mini cupcakes that are not sweet, rather tough, and crumbly. So overbeat a cake mix, overbake mini cupcakes, then don't ice them.
Or just make normal mini-cupcakes adn call them Fairy Cakes. :-)
