Do you want Spanish food (meaning food from Spain) or Puerto Rican food (meaning food from Puerto Rico)?
When the Spanish got to Puerto Rico they took the local ingredients of Puerto Rico and used them to cook in the traditional mediterranean way Spaniards cook. There is a great difference between Spanish food and Puerto Rican food. You need to define what you want first.
The easiest Puerto Rican meal I know is mashed plantains (Fufu de platano) served with steak (there are no special Puerto Rican steak recipes, just get a good quality steak, season with salt and pepper, garlic and onions, lime juice and cook till done to your taste. Then serve with a simple lettuce and tomato salad.
The fufu recipe is available on foodnetwork.com, just type in "Fufu" at the top of the page where it says Search on a green background.

Lemony Spanish Pepper Chicken:
8 (6-ounce) chicken thighs, skinned
1 1/2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Cooking spray
1 1/2 cups red bell pepper strips
1 1/2 cups green bell pepper strips
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice
1/2 cup fat-free, less-sodium chicken broth
2 tablespoons ketchup
Sprinkle the chicken with oregano, salt, black pepper, and paprika. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken, and saute 3 minutes or until lightly browned. Turn chicken over; top with bell peppers, rind, and juice. Cover, reduce heat, and simmer for 30 minutes or until chicken is done. Remove chicken from pan. Combine broth and ketchup in a small bowl. Stir ketchup mixture into pan; bring to a boil. Serve pepper mixture with chicken.
Yield: 4 servings (serving size: 2 chicken thighs and 1/2 cup pepper mixture)

I'm Puerto Rican, though not much of a cook. Rice and beans is a way to go if you want a puerto rican dish.
Here is for the beans:
Ingredientes:
1 lb. of dried rosita or red beans
(wash and discard any abnormal beans)
2 liters of water
1 teaspoon of salt or to taste
(be careful with the Sazon it's also salty)
1 packet of Sazon with achiote
4 ounces of tomato sauce
1 tablespoon of olive oil
1 potato (peeled and cubed)
1/4 teaspoon of pepper
2 tablespoons of recaíto
1/2 lb. of cooking smoked ham
(cut up into bite size pieces)
Procedimiento:
In a pot to hold the beans and the 2 liters of water boil the beans for 45 minutes to an hour. The water will evaporate so after 20 minutes of cooking add more water, about 1 cup. When the beans are tender turn off the stove (don't discard the water).
In a frying pan add all the other add the olive oil (if you don't have olive oil use vegetable or corn oil) and heat. When the oil is hot add all of the other ingredients which will be the sofrito. Turn down the heat and simmer for 5 minutes. Add the sofrito to the pot where the beans with the water are in. Turn on the heat again to medium and cook for an additional 20 or until the mixture becomes a bit thick not soupy. Make sure the potatoes are done.
Note: Instead of ham you can use chorizo (about 4 links chopped like a bit thicker than nickel's) and instead of potatoes you can use chunks of calabaza (pumpkin). Sometimes we add bollitos (optional) made with green plantain.

You can also do Arroz con Gandules:
Ingredientes:
Ingredients: 3/4 lbs green pigeon peas
3 cups of water (used to precook the green pigeon peas)
2 cups of white rice
2 ounces of smoked ham, diced (makes approx. 2/3 cup)
2 tablespoons of corn oil or olive oil
1/2 cup of sofrito
1/4 cup tomato sauce
1 tsp of salt
For soaking the green pigeon peas:
1 quart of water
2 teaspoons of salt
Procedimiento:
Rinse the rice and set aside Soak the green pigeon peas in 1 quart of water and 2 teaspoons af salt for 15 minutes. Then rinse them and cook them in 4 cups of water until they have softened. Test by picking up one pea in a spoon and squeezing with between two fingers. You should be able to squeeze it without much effort. Take care to not over cook them to point where they break apart. When they are cooked, set aside 3 cups of water used to cook them in. Rinse the peas and set aside In a 4 quart cooking pan, add the 2 tablespoons of oil, smoked ham and simmer over moderate heat for 3 minutes. Then add the sofrito and the tomato sauce and simmer for another 3 minutes as you mix the items. Raise the heat to moderate-high and add two table spoons of the water that was set aside and the green pigeon peas. Simmer for 3 minutes as you mix the items. Raise the heat to high and add the water that was set aside. Once the water begins to boil, add the rice. Mix all the items well. Once the water starts to boil again, reduce the heat to moderate high and cook uncovered until most (but not all) the water has evaporated. Reduce the heat to low. Mix the rice again then put the lid on the pan and cook for 15 minutes. Mix the rice once more and continue to cook until the rice is fully cooked. You can sample the rice to see if it is fully cooked. It should be soft to chew. Makes approximately 6 servings
