some spuds collapse and go soggy, and some oils have a nasty taste. I don't want to use lard or dripping, for health reasons. King edwards make brilliant roast potatoes, but are they ok for chips?

King Edwards or any other red potatoe and Ground nut oil. The oil is a bit expensive but makes better chips than using sunflower oil.

King Edwards are great for chips but Maris Piper are better. Use vegetable oil for deep frying or olive oil for shallow frying. Make sure the oil is very hot and cut your chips thick sized. The thicker the chip the less oil it holds so it's more healthy! If this does not appeal, buy oven chips.

King Edwards are marvellous for chips. I would use sunflower oil for deep frying. The trick is to heat the oil until it is very hot and then blanch the chips. You then lift them out and allow the oil to heat up again and when it has reached the same temperature as before, you fry them until brown. This is what chefs do.

terrific potties are Maris Pipers or Lincolnshire Whites & dripping or lard continues to be the terrific for flavour yet vegetable oils which includes floor-nut oil are actually used for well being & vegetarian motives. King Edwards are rather terrific for roasting yet no longer too sturdy for chipping... happy munching!

I use maris piper potatoes... preheat oven gas mark 9 peel potatoes and cut them into chips..boil for 4 minutes..drain and leave for 10...return to dry pan with lid, shake to 'rough up' the edges...spray a baking tray with fry light, place chips on tray..spray chips with fry light...place in oven and leave for 20 - 30 minutes, turn chips over half way thru cooking...lush...and healthy!

Maris Pipers are best. Dripping is best but if you don't want to use it for health reasons, vegetable oil works but you don't get the same taste.

well if useing new potatoes the cyprus spud is best cooked in low cholesterol sunflower oil.if useing old potatoes there are maris piper or desiree cooked again in sunflower oil.

Buy the potatoes which have red skins. Cook in sunflower oil.

Any potatoes will be great if you cook them this way....The best way to cook chips is..peel then and slice into nice chunky sizes then boil them gently for 5 mins..no.more.. then leave to get cold..best to do them 2 hours before you need to fry them .....make sure that the fat is very hot then you will cook the perfect chippy...cook eat and enjoy..and also they are great dipped in mayo and tomato sauce yummie..

I always use Fry Light. You can get it in any English supermarket and its low in fat too. Its in a pump action bottle and ...well, its just great! _ king edwards are also ok for chips xx
