I think it is something to do with the processing removing much of the nutrition-so it is not counted as a vegetable in a nutritional sense although we all know where it comes from. Many french fries contain levels of corn in addition to potatoes so it is kind of a bastardised(not a swear honest!!) vegetable.

French fries aren't a vegetable, potatoes are. like you said they are deep fried potatoes. vegetables tend to be grown then turned into other things, like mash, they're made from vegetables.
Once they find a french fry growing in the ground thats when it'll be called a vegetable in its own right ;)

Do you mean in the sense of "Why does a portion of chips not count towards my 'five a day' recommended fruit and veg?"
If so, the answer's simple...
Yes, they ARE vegetables, as you point out. They're potatoes. But the way that they're prepared, such as the fact that they're cooked in fat (and god knows what else if you get them from a fast-food place) means that the negative health aspects of what you're eating outweigh the positive. If you want potato to be one of your five a day, have a baked potato. With NO butter!! This way, it is an untreated vegetable, with all it's goodness!

I consider them a vegetable! Probably because their nutritional value compared to something like broccoli or other less tasty food is much lower, and don't really outweigh the grease and salt.
Don't get me wrong, I still eat my broccoli and asparagus, but I have to indulge in my fries once in awhile, too.
This is why I love to run, I get to indulge in one of my guilty pleasures -- carbs.
