I have never been particularly good at making pancakes. I either burn them, or they look pretty but don't taste too good, or vise versa. What are some good tips at making nice looking tasty pancakes? Thanks!

Club Soda Pancakes

Super light pancakes and easy to make. I got this recipe from Houston Chronicle newspaper. I like the pancakes because they are thin, not heavy. Note that because of the carbonated club soda the batter cannot be stored but if you make all of the pancakes (or waffles, though I haven't tried this) you can freeze them for later.

15 pancakes 7 min 2 min prep

2 cups biscuit mix (I use Bisquick)
1 egg
1/2 cup vegetable oil
1 1/2 cups club soda

Mix ingredients until smooth and blended but don't overbeat.
Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle.

Cook pancakes until puffed and dry around edges (tiny bubbles will begin to form).

Turn and cook other sides until golden brown. Flipping ONCE should be enough. The first pancake isn't always the best one.

Pancakes are tricky for such a simple food. First, when making the batter, do not overmix. It would be better to have unmixed flour than have it overbeaten. Even if a recipe uses oil, substitute melted butter instead. The recipes with whipped egg white are always better. When frying them, use a griddle (i picked one up recently and am converted!). Have the pan hot, put oil and a little butter all over, and drop the batter on, spreading out if too thick (but it's best to make it thinner in the first place). Now it takes patience, do not move it until it's bubbling and dry looking, with crispy brown around the edges. Then flip and leave it alone until it looks done. Good pancakes takes patience and practice.

I like to make the tick American style pancakes, covered with maple syrup and lime juice:

about 1-1.5 cups of flour (any kind whill do)
3 eggs (seperated)
milk (judge volume manually)

1. Sieve flour in to a mixing bolw
2. Add the three egg yolks
3. Add a touch of milk and mix
4. Mix thoroghly, adding milk until you have a paste that is still reasonably thick (don't add too much milk)
5. Whisk the 3 egg whites up until they are peaky (basically they hold their shape when you lift out the whisk)
6. Carefully combine the light egg white mix to the thick batter you made previously, folding through. Don't be too rough because you'll lose the air

This should give you quite a nice thick batter that is actually quite light. Place small amounts on your pan and flip....

Hey presto = american pancakes!

Package mix is OK, but add more oil, and use buttermilk, or sour milk (a couple tablespoons of vinegar in fresh milk and it will cuddle in an hour or so). Make the batter thinner. The first 3 or so pancakes won't cook right usually, but after that, keep the flame steady and make them as fast as you can.

i promise you this is going to come out great. Pancake mix, follow exactly on the box. Mix the pancake mix with water lightly. Set aside, covered in refrigerator for 30 mins.

Heat a 4 or 5 inch pan on low heat for 10mins, drop half teaspoon of butter, use a round ladle to pour pancake mix into pan, 2 scoops, keep at low heat. Once it starts to bubble, it is time to turn it over. Enjoy.

I use the recipe in my 15 year old Betty Crocker cookbook. It is the one for buttermilk pancakes. It is just as easy as a box, just need to have buttermilk in your fridge.
Your first poster now has me dreaming of pecan pancakes and the real maple syrup at Cracker Barrel. Those truly are heaven.
Which reminds me, use real maple syrup instead of the cheap stuff. You will have memorable pancakes if you do, homemade or not.....

Get a complete mix and use cider or apple juice instead of water. Mix equal amounts of mix and liquid, which will make thin tender cakes that are crisp around the edges. Cook in a non-stick pan in canola oil and only use butter and real maple syrup on them. People will rave about them. Use low end, med-high setting on your burner.

Ableskiver (Pancake Balls)

Ingredients :

2cupSifted flour
2tblSugar
1tspBaking soda
1tspCardamom
3/4tspSalt
Combine:
1cupThick sour cream
2/3cupMilk
3xEgg yolks, beaten
2tblMelted butter

Method :

* Set an ableskiver pan over low heat
* Sift together and set aside:
Make a well in center of dry ingredients. Add liquid mixture all at one time, stirring until well blended.
* Beat until rounded peaks are formed: 3 egg whites. Gently spread batter over egg whites and fold together.
* Test ableskiver pan by dropping on it a few drops of cold water; if drops dance around in small beads, temperature is right. Grease well with butter
* (About 1/2 tsp. per well)
* Pour batter into wells, filling about one half full. With a fork turn ableskivers frequently to brown evenly. Do not pierce. Ableskivers are done when a wooden pick inserted in center comes out clean. Serve immediately sprinkled with Confectioners' sugar. If desired, accompany with a tart jam. About 4 doz. balls.
* Apple Pancake Balls (Ableskiver II
* Follow above recipe. Rinse, pare and dice 2 medium-sized apples. Sprinkle about 1 tsp. of the diced apples over batter in each well.

* In a large bowl, beat the egg whites until they start to get bubbly. Mix in the remaining ingredients , one at a time. Blend well after each addition. With a large spoon, pour the batter into a hot non stick skillet that has been sprayed with vegetable oil cooking spray. Flip when the bottoms start to brown. Serve immediately. Since there is no oil in this recipe don't overcook or they'll get tough.
* Don't try this batter in your waffle maker. The batter stays moist & makes limp waffles.
* Makes 24 pancakes; ! pancake contains less than 1/2 gram of fat.
* Variation:
Immediately after you've put the batter in the hot skillet, drop in some slices of fresh fruit. Bananas, strawberries, blueberries & apples are recommended.

I put a little bit of nutmeg in the batter. Then cook them on medium heat, and flip them when the top is all bubbly. They come out perfect and taste really good!

i love doing this for my kids and they love it
take Pancake mix in a box don't matter what type it is
and in the mix put some apple sauce and Cinnamon (( to your liking ))
and cook them like you would any other pancake they are so good
