James Beard "American Cookery", in my opinion is one of the best out there.

Thanks for a great question, and a big THUMBS UP for Oda. We moved my mom to my sister's house a few years ago and I became the keeper of the recipes. This year we're trying to put together a cookbook for the family, with everyone submitting their favorite recipes. I"ve been asked to pull a few from Mom's box.
But for commercial cookbooks, I have two that I absolutely love. They were written by two sisters, and have incredibly funny stories, clever cartoon drawings, and the name of each dish is a parody of something familiar. There's Celine Dijon Chicken, Tickle Me Elbows, The Big Chili, To Stir With Love, Nat's King Coleslaw... it's a riot!
The books are Crazy Plates and Looney Spoons. They may be a bit hard to find in a bookstore but should be available online. I see they now have a new book just recently released.

LOL, yes, we call it our 'Cooking Bible',, it's just an old notebook started by my mother back in the early 60's with handwritten recipes, inserts, and pasted photos and recipes of everything that has been considered our 'favorites'. Pages are tattered, torn, and yellowed with age, but it means more than the most expensive cookbook in the world to me.
Everything from Cecil's Spanish Rice to Mom's Homemade Chocolate Fudge, and many many more in between. We must've made some of these recipes hundreds of times over the years. I've always said, if this house was ever on fire, that would be the first thing I'd grab on the way out.

The Good Housekeeping Illustrated Cookbook. Mine is falling apart from usage. I am a professionally trained chef and have bookshelves of cookbooks but this is my favorite.

I've always loved the Better Homes and Gardens cookbook. I haven't gotten a bad recipe out of there yet!

I bought a cookbook named Quick and Easy... I love it. It has some really great dishes that look hard to make, but if I can do it - anyone can, trust me!!!

I like Paula Dean's cookbooks (Food Channel).
Her stuff is not diet-friendly, but soooo yummy and not too hard.
