so ive been in texas and havent learned any tex-mex food? any recipes?

I've never been to Texas, and I'm from San Diego, so our Mexican food is completely different! But, here's a couple recipes I've used that I really enjoy and are typicall tex mex. Hope you enjoy them hun!

Tex Mex Chicken Taco Soup

1/2 cup diced onions
1/2 cup diced green bell peppers
1 tablespoon minced garlic
Vegetable oil
1 pound chicken breasts, boiled and shredded
1 package taco seasoning mix
1 (8-ounce) jar salsa
1 (14-ounce) can kernel corn
1 (14-ounce) can hominy
1 (16-ounce) can ranch style beans
2 (4-ounce) cans tomato paste
2 (14-ounce) cans chicken broth
1 (8-ounce) package cream cheese
Saute onions, green bell peppers, and garlic in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup. Simmer on low for another 10 minutes. Serve with tortilla chips and grated Monterey jack cheese.
Also, great on the second day over rice.

Tex Mex Red Beans and Rice

1 3/4 cups water
1 cup enriched white rice
1 tablespoon extra-virgin olive oil or vegetable oil, 1 turn of the pan
2 slices bacon, chopped
1 medium onion, chopped
1 can red beans, drained
1 tablespoon cayenne sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
Bring water to a boil in a small saucepan. Add rice, cover and simmer 20 minutes, stirring occasionally.
When rice is done, remove it from the stove top. To a medium skillet over medium high heat add oil and bacon and cook 3 minutes to crisp edges of bacon. Add onions and cook 3 minutes to soften. Add beans to heat through, then stir in cooked rice. Season rice and beans with cayenne sauce, salt and pepper, to your taste. Serve rice and beans from the skillet.

Make Your Own Tacos Bar

Chipotle Turkey Taco Filling:
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 1/3 pounds ground turkey breast, the average weight of 1 package
1 small onion, chopped
2 cloves garlic, chopped
2 chipotles in adobo sauce, chopped
1cup tomato sauce
1 rounded tablespoons chili powder, a rounded palmful
Salt
1/2 cup water
In a small skillet preheated over medium high heat, add oil and turkey breast meat. Brown meat 2 or 3 minutes, then add onions and garlic. Cook onions and meat together for another 3 to 5 minutes. Stir in chipotles, chili powder and tomato sauce. Season your filling with salt to your taste. Stir 1/2 cup water into your filling. Reduce heat to medium low and simmer until ready to serve.
Pork and Bell Pepper Filling:
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 1/3 pounds ground pork
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 small green bell pepper, chopped
1 tablespoon ground cumin, a palmful
several drops cayenne pepper sauce, to taste
1/2 teaspoon allspice
Salt and freshly ground black pepper
1/2 cup water
Heat a small to medium skillet over medium high heat. Add oil and pork to hot pan. Break up pork as it browns, 2 to 3 minutes. Add peppers to the pork and season mixture with cumin, cayenne sauce, allspice, salt and pepper. Reduce heat to moderate and cook filling 5 minutes longer. Add 1/2 cup water to the pork. Reduce heat to low to keep filling warm.
Toppings and Sides:
1 1/2 cups shredded cheddar or smoked cheddar, about 1/2 pound
1 1/2 cups shredded Monterey Pepper Jack cheese, about 1/2 pound
Shredded Romaine lettuce, 2 hearts
6 scallions, chopped
Diced red plum tomatoes
Taco sauce, any brand
Yellow Pico de Gallo, recipe follows
10 super size taco shells, warmed to package directions
Yellow Pico de Gallo:
3 yellow vine ripe tomatoes, seeded and diced
2 small jalapeno peppers, seeded and chopped
1 small white onion, chopped
3 tablespoons chopped fresh cilantro leaves
Coarse salt

Combine all Pico de Gallo ingredients in a small bowl and serve.
To assemble bar, arrange taco shells next to the stove top. Serve the fillings from the skillets they were cooked in. Place toppings in small dishes on opposite side of the stove top. Tex Mex Red Beans and Rice or store bought refried beans make a great side dish.

Tex Mex Gooey Casserole


1 tablespoon olive oil
2 cups chopped onions
1 pound ground beef
1 pound diced stew meat
1 tablespoon chopped garlic
2 tablespoons chili powder
2 teaspoons cumin
Salt and pepper
1/4 cup tomato paste
4 cups peeled, seeded, and chopped tomatoes
3 cups beef stock
10 flour tortillas
2 cups grated Medium Cheddar cheese
2 cups grated Monterey Jack cheese
Preheat the oven to 375 degrees F. Grease a 9 by 9 by 2-inch square baking dish. In a large skillet, heat the oil. When the oil is hot, add the onions and saute for 3 to 4 minutes. Add the ground beef and continue to cook for 3 to 4 minutes, stirring constantly. Add the diced meat and continue to cook for 3 minutes. Stir in the garlic, chili powder, and cumin. Season with salt and pepper. Stir in the tomato paste. Stir in the tomatoes and stock. Simmer the mixture for 30 minutes, stirring occasionally. Remove from the heat and cool. Spoon a couple of tablespoons of the chili mixture on the bottom of the prepared pan. Lay two tortillas on top of the chili mixture. Sprinkle the top of the tortillas with the Cheddar and Jack cheese. Repeat the layering process until all of the chili, tortillas and cheese are used. (The final layer should be cheese) Place the pan in the oven and bake until the cheese has melted, about 10 to 12 minutes. Remove from the oven and cool slightly before slicing.

Tex Mex Burrittos

2 pounds lean ground beef
1 teaspoon oregano
2 large onions, finely chopped
1 teaspoon cumin
12 ounces canned chopped green chiles
8 ounces Montery Jack cheese, grated
4 cloves garlic, finely chopped
15 ounces canned stewed tomatoes
10 flour tortillas
Preheat oven to 350 degrees and grease a 9 x 13 inch pan. In a large skillet, cook beef until mostly browned. Stir in onions, chiles and garlic and cook until onions have softened. Add the tomatoes, oregano and cumin and cook until the tomatoes have thickened to form a sauce about ten minutes. Heat the tortillas so that they are pliable--either over a gas flame or in a microwave oven. Divide meat among the tortillas, about 1/4 cup per tortilla, and sprinkle each with cheese. Roll up tortillas and place in baking dish and top with more grated cheese. Bake for 10 minutes. Garnish with a thick salsa, sour cream and chopped cilantro if desired

Tex Mex Burgers with cajun mayo

INGREDIENTS
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
1 1/3 pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato
DIRECTIONS
Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.

Well if you'll bear with me, this is easy but it's complex ;<} Every once in a while I make fajitas, otherwise known as wraps, I guess. I'll get flour tortillas and warm them on a plate at the last minute - 30-60 seconds in a microwave between damp paper towels. Before that point I'll make up plates or little bowls of "stuff" beans of your choice, chopped green chile, rice if I have it, avacado or guacamole, chopped bell pepper, tomato and of course grated cheese, whatever you like. And meat - it's a good way to use left overs, or I'll do grilled shrimp. That's the complex part, all the little portions except it's just chopping and grating. Then you each get a tortilla and fill it with whatever you like. You could use salsa but we prefer green chile - you could add onions but we don't care for them. It's easy, it just takes a minute to put together.

Spicy Tex-Mex Chicken Cobbler:

1 medium onion, sliced
2 tablespoons vegetable oil
1 (15-ounce) can black beans, rinsed and drained
1 (10-ounce) can diced tomatoes and onions with lime juice and cilantro
1 (10-ounce) can enchilada sauce
2 cups cubed cooked chicken
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground pepper
1 1/2 cups all-purpose baking mix
1 large egg
2/3 cup milk
1 cup (4 ounces) shredded extra-sharp Cheddar cheese, divided
1/2 cup chopped fresh cilantro, divided
2 avocados, sliced
1 tablespoon lime juice
Sour cream

Sauté onion in hot oil in a 10-inch cast-iron skillet over medium-high heat 3 to 4 minutes or until tender. Stir in beans and next 8 ingredients. Bring to a boil; reduce heat and simmer, uncovered, 15 minutes.

Combine baking mix, egg, and milk in a medium bowl, stirring until smooth. Fold in 1/2 cup cheese and 1/4 cup cilantro; pour over simmering chicken mixture.

Bake at 400° for 20 minutes or until a wooden pick inserted in topping comes out clean. Sprinkle with remaining 1/2 cup cheese and remaining 1/4 cup cilantro. Sprinkle avocado slices with lime juice, and arrange over cobbler. Serve with sour cream.

Yield: Makes 4 to 6 servings

1 lb chicken breast in the crock pot with 1 cup of medium salsa. Cook on medium heat all day. When it's fully cooked, shred the chicken and return to the pot with 4 oz light velveeta until it melts.

It's low fat, low cal and super tasty. You can use it for burritos, dip, tostadas, nachos...whatever. This amount is for a family of 4, but can be increased.
