I suppose you simply want to cook only what you want to eat and not have to cook the entire pizza, storing or throwing away the leftovers.

Do NOT use any type of knife: it's too easy to slip with one no matter how you're holding down the pizza.

The best way to cut it is with a good pair of kitchen scissors. You'll be able to hold it with one hand and cut accurately with the other.

Another tip: cut the entire pizza into appropriately sized pieces at the same time then store each piece in a Ziploc freezer bag until ready to use.

when its frozen you can just break them in half with your knees or you can cook it first and then maybe try cutting it later with a super sharp knife

While I don't know why you need to do this, I'd say kitchen shears or a long sharp chef's knife. I'd probably try the shears first.
