The most important thing is to use an oil with a high smoking point, meaning it won't burn until it gets really hot. Olive oil has a low smoking point, so do not use it for deep frying. The plant-based oil with the highest smoking point is avocado oil, however it is way to expensive to use for frying! Coconut oil and palm oils also have high smoke points, although they are not the healthiest because they are highly saturated. Your best bet is canola and sunflower oils.

Peanut Oil Is Great for Deep-Fryer:
That's no surprise considering that a number of restaurant chains including Chick-fil-A and Five Guys swear by peanut oil, prominently advertising that they use it exclusively for all of their deep-frying needs. Peanut oil has a high smoke point and neutral taste which makes it perfect for frying foods. It's also low in saturated fat and high in polyunsaturated and monounsaturated fats, making it healthier than frying with shortening or lard.

Rice oil can take the heat for a deep fryer. It is better for you to. Most other types start to smoke due to the high temperature of a deep fryer.

A lot of people use peanut oil because it retains heat the best, and doesnt burn, but its expensive. Corn oil is just as good, and less expensive. Vegetable oil will be okay, too as long as youre not deep frying all day. Good cooking!

I use peanut oil in my home fryer. I find that I don't have to replace it as often as vegetable/corn oil.

peanut oil is best, but it is pretty expensive. Vegetable oil works fine. That's what I use.
