Albondigas
combines..meatballs, carrots, salsa..for a hearty..quick and easy soup!
INGREDIENTS
1 quart water
4 carrots, sliced
2 small potatoes, peeled and diced
1 medium onion, diced
1 1/2 cups salsa, medium or hot
2 beef bouillon cubes
1 1/2 pounds ground beef
1/3 cup seasoned dry bread crumbs
1/3 cup milk
1 tablespoon chopped fresh cilantro
DIRECTIONS
In a large stock pot, bring water, carrots, potatoes, onion, salsa, and bouillon cubes to a boil. Reduce to a medium simmer, stirring occasionally, approximately 10 minutes.
Mix the beef, breadcrumbs, and milk together in a bowl. Form into 1-inch meatballs, and drop into boiling broth. Once soup returns to a boil, reduce heat to medium-low.
Cover and cook 20 minutes, or until meatballs are no longer pink in center and vegetables are tender. Serve with sprinkled cilantro for garnish.

Basic meatballs recipe
1 lb beef, ground
1 large egg
1/4 cup onions, finely chopped
1/3 cup italian herbed breadcrumbs
1/4 cup milk
1 teaspoon worcestershire sauce
salt & freshly ground black pepper, to taste
Mix all the ingredients together.
Shape mixture by Tablespoonfuls into 1 1/2-inch balls.
Place the meatballs in a lightly greased 13 X 9 X 2 or 15 1/2 X 9 1/2 X 1-inch baking dish and bake, uncovered, in a 400 degree oven until light brown, about 20-25 minutes. Use as desired (can be frozen for later use)

Here's one meatball recipe I use, I will see if I can pull up the other one too.
Mama Luliucci's FAMOUS MEAT-A-BALLS (Italian Meatballs)
.36 meatballs 30 min 10 min prep
2 lbs lean ground beef
8-10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)
2 eggs, slightly beaten
1/2 teaspoon garlic powder (or to taste)
1 teaspoon italian seasoning (or to taste)
2 teaspoons parsley flakes (or to taste)
1/4-1/2 cup grated parmesan cheese (or Locatelli)
1-2 teaspoon salt
1/4-1/2 teaspoon black pepper
olive oil or vegetable oil (for frying)
Mix all ingredients gently in a large bowl until well combined.
Roll meatballs 1 1/2- 1 3/4" in diameter.
Heat about 1/4" of oil over medium heat in a large frying pan.
Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.

Meatballs in Onion Gravy
Yield: 4 servings
A very easy recipe that offers a good time-saving alternative to the task of hand-rolling meatballs. Serve over mashed potatoes, noodles, or rice.
1 envelope onion soup mix
1 tablespoon all-purpose white flour
2 cups water
1/2 teaspoon Worcestershire sauce
1 pound ground beef
1 egg, slightly beaten
1 teaspoon dried oregano
1 to 2 garlic cloves, minced
1/2 cup rolled oats
1/2 cup milk
1/4 teaspoon salt
In a large skillet, combine the soup mix, flour, water, and Worcestershire sauce. Bring to a boil over moderate heat.
In a mixing bowl, combine the beef, egg, oregano, garlic, oats, milk, and salt and mix well. Drop by the rounded teaspoonful into the simmering gravy. Cook for about 5 minutes, then turn the meatballs over. Cover and simmer for another 5 minutes

GRANDMA MARIES ITALIAN MEATBALLS
2-3 pounds lean ground chuck
in separate bowl mix together the following:
2 tbs minced garlic
1/2 cup Italian bread crumbs
1/4 cup onion diced very small
1/4 cup green or red bell pepper diced very small
2tsp season salt
2 tsp oregano
1 tsp basil
1, 8 oz can crushed tomatoes, drained
2 eggs slightly beaten
mix ingredients into meat gently ( the more you handle ground beef when mixing for meatballs ,meatloaf, hamburgers etc. the tougher it becomes after cooking ) Roll meatball to desired size
bake on a broiler pan until internal temp reaches 165 degrees
when done move onto paper towels to drain excess grease.

i made my own recipie for meatballs tonight and they were delicious. here ya go......
1 1/2 pound of ground beef or ground round
1 egg
1/2 package saltine crackers crushed......(may use just a few more if it looks like its needed)
1/4 cup dale's steak seasoning ( a little more or less depending on your taste preference)
Mix all ingredients together. Form the meatballs. Place in a baking dish or pan, cover with foil and bake on 400 for about 45 min. Uncover and continue to bake for 5-10 min..until they are as brown as you'd like them. Prepare a package of brown gravy mix according to package. Remove the meatballs from the pan. Put them in a serving bowl and pour the brown gravy over them. I PROMISE YOU WILL LIKE THESE
