Chicken and Rice

4 to 6 leg quarters, or 4 breasts with skin on
1 cup uncooked rice
1/2 a cup raw carrots, chopped
1/2 a cup broccoli florets
1/2 a yellow onion, chopped
2 cloves of garlic, chopped
2 bay leaves
1 tablespoon dried oregano
1 teaspoon of salt
1 tablespoon of black pepper
2 cups of chicken broth

Put everything in a roasting pan, except the chicken
Stir it well
Place the chicken pieces on top, (season the chicken with some of the herbs and spices, but not the salt, the salt will dry the chicken out)
Cover with a piece of foil
Bake in a 400 degree oven for 30 to 40 minutes
remove the foil, and let roast until the liquid has cooked into the rice, and so the tops of the chicken will brown. Delicious!

HINT: If you dont want to use fresh veges, use a half a bag of frozen vegetables, any mix you like, put them in while they are still frozen, do not defrost.



Frittata (an Italian Dish)

6 eggs
1 cup of any pasta, cooked, I use linguine, but macaroni, spagetti, penne, any kind will do
1 salad tomato, chopped, you can use canned chopped up without the juice, optional
1/2 a yellow onion, diced
1/2 a cup sliced mushrooms
1 tablespoon Oregano
1 tablespoon basil
2 cloves of garlic, chopped
(you can add meat to this too, about a cup)
Mix everything well, together in a bowl
In a hot round skillet, add a tablespoon of any oil, and a pat of butter
Let melt, and pour your Frittata mixture in, and cook for about 5 minutes, until the sides start to break way from the pan (to make cooking faster, use a spoon and make holes in the middle so the uncooked egg gets to the surface of the hot pan)
Use a large plate, cover the frying pan, and flip the Frittata onto it, then slide it back into the pan for 1 more minute of cooking.
Serve on a nice platter, with Salsa on top, if you have it.
Cut it like a pie or cake, Delicious!

These ingriedients except for the pasta are optional. You can put near anything in Frittata, and dont add milk to the eggs, it makes them too soft, you can add about a tablespoon of water to them, if you want them to hold up better. Enjoy



Twice Baked Potatoes

2 russet baking potatoes, per person
1/2 a pound ground meat, or 2 breasts of chicken, cut in small pieces
1/2 a yellow onion, chopped
4 to 5 cloves of garlic, chopped
about two cups of grated cheese, I use cheddar, but you can choose any other you like, Gouda, mozzarella, jack etc
1/2 a cup mayonaise, or sour cream
1 tablespoon dried oregano
salt and pepper to taste
Pepperoncini salad peppers for a garnish (just buy a jar of them in the pickle isle)

Bake the potatoes at 350 degrees for an hour
Cook your chicken or ground beef, adding the onions, garlic, herbs and spices (not the salt), then drain of any fat, let cool
Cool the cooked potatoes, then slice a V out of the top, so the part you cut out looks like a fat french fry.
with a spoon, scoop out the potato meat, leaving some at the bottom, dont scoop all of it out, you want the skin as your serving container
Mix the potato meat, the chicken, or ground meat mixture together well
add the mayonaise, or sourcream, 1/2 of the cheese, adding also salt and pepper, as needed, mix well, gently. You will need to taste the mixture, to make sure its to the flavor you like.
Stuff the potatoes with the mixture, put them on a cookie sheet
Lay grated cheese on top, and a pepperoncini per potato
Gently lay a piece of foil over the potatoes to keep the cheese from burning
Bake at 350 for 1/2 an hour
(Chances are you will have some stuffing left over. Save this and pour over warm bread for a quick snack)

Serve with any warm bread of your choice, YUM!

Mushroom and Potato soup

4 to 5 baking potatoes (russet),chopped (leave the skins on, do not peel them off)
2 cups of mushrooms, sliced in 1/2
1 large yellow onion, chopped
3 to 4 cloves of garlic, chopped
3 to 4 cups beef broth
11/2 cups of cream, or milk
2 to 3 tablesoons dried Oregano
2 Tablespoons of dried Sage
salt/pepper to taste
1 cup red/ or white wine(optional)

Roast 1/2 the chopped potatoes in the oven with a little oilive oil, salt, pepper, sage and dried Oregano

In a large pot, saute the other potatoes, 3/4 of the mushrooms, the onion, and garlic in some oilive oil, adding a pinch of salt a little at time.

After about 3 minutes, when your veges start browning, add your beef broth, and wine, stir, cover, and on a medium heat let cook for about 1/2 an hour, or when very soft, and cooked through.

Blend the soup until almost a puree, then add your cream, or milk, check the seasoning, you will probably need to add more salt and pepper.

Stir, and let the milk or cream cook into the soup, on a LOW heat. Do not cover again, you dont want the cream to break up. After about 10 minutes, add the last 1/4 of your chopped mushrooms and the roasted potatoes, let cook on the stove another 5 minutes. The 1/4 of mushrooms and the roasted potatoes will give your soup a bite, and add more flavor.

Enjoy with some garlic toast, or croutons. Potatoes and mushrooms are hearty and filling.
You can add chunks of beef, or chicken to this also, if you like



Mac and Cheese with Tuna, and Veges (ground beef can be substituted)

I box macaroni and cheese, cook by package directions
2 cans of drained chunk Tuna, or 1/2 a pound cooked hamburger meat, drained of fat
1/2 a package mixed vegetables, or fresh, sauted in a little oil, with salt and pepper
1 cup extra fresh grated cheddar cheese
Mix all together, and bake until hot, about 15 to 20 minutes on a 350 oven. Yum, Yum!

Quick and Easy Vegetable Soup

1lb ground beef / Brown and drain excess grease
1 can diced tomatos
1 can whole kernel corn
1 can veg-all
2 cans tomato sauce
1 small can mushrooms
salt, black pepper, garlic powder
12 oz. water
1 1/2 cups of elbow macaroni

Add all ingredients in to boiler except macaroni bring to boil and let simmer about 20 to 30 minutes then add macaroni. When the macaroni is done you will have

QUICK AND EASY VEGA TABLE SOUP

Make a pan of cornbread to go with it.

It takes about an hour for the whole meal.

mini english muffin pizzas - kids can make their own toppings, you put on pizza sauce on the english muffin half, they do the rest, bake for 10 min on 350 Another is mac/cheese with ground beef or chicken. 1 lb pkg of elbow macaroni or other small fast cooking pasta, 1 jar Ragu Cheedar Sauce, 1 can cooked chicken breast, drained, a little salt, 2 cups pea/carrot mix or other veggie that they like. Cook the noodles, drain, add the rest and heat up. Should be enough for left overs too. Filling, fast, and very kid friendly. Another idea for you to cut down on time is to prepare all the weeks meals over the weekend. Freeze/refridge and heat up. I love my crockpot because I can make a large batch of chili, we will eat it one night, freeze the other half and pop it in and heat again in crockpot before leaving for work so it is done when I get home. I cook it all on low for the entire 8-9 hours. Gumbo, chicken, meatloaf, roasts, soups/stews, the crockpot bags are great in a real pinch, etc. are all done in th crockpot and then I just heat up frozen veggies or make a salad to go with. If you need a starch, instant potatos or rice/noodle pouches are wonderfully quick. I use two crockpots and rotate out so they are clean and cool on oposite days.

Red beans and rice ( the combo makes a perfect protein ) and cornbread from a mix. Fruit on the side. All that stuff you can keep on hand in the pantry.
I also keep a lot of fresh veggies and pasta on hand. Saute' the veggies, toss in cooked pasta, top with some Parmesan cheese and voila! " Pasta Primavera."
I happen to get cravings for grilled cheese and tomato sandwiches served with frozen french fries and baked beans, too.

30 MINUTE CHILI CON CARNE:
1 cup onion, chopped
1 Tablespoon oil
1 lb. ground chuck
1 large can whole tomatoes with juice
1 (8 oz.) can tomato sauce
2 cups (16 oz.) kidney beans, drained
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 teaspoons chili powder
2 1/2 teaspoons sugar
Saute onion in oil in large skillet. Remove onion and set aside. Brown ground chuck in the same pan and drain. Return meat and onion to skillet and add remaining ingredients. Simmer for 10 minutes and serve.

SPAGHETTI SUPERB:
1 lb. ground beef, browned and drained
1/2 cup onion, chopped and sauteed
1/4 cup green pepper, chopped and sauteed
2 Tablespoons oil
1 can Condensed Tomato Soup
1 can Condensed Cream of Mushroom Soup
1 can water (measured from soup can)
1 clove garlic, minced
1/2 lb. spaghetti, cooked and drained
1/2 cup shredded Sharp Cheese
In a large skillet, saute onion and green pepper in oil; add ground beef and brown until thoroughly cooked. Drain off grease. Add tomato soup, cream of mushroom soup, water and garlic to meat and heat. Stir in cooked spaghetti. Pour into large casserole dish and top with the shredded cheese. Bake at 350 degrees for 30-35 minutes or until the cheese has melted and is bubbly.

Spaghetti

1 can diced tomatoes
1 can tomato sauce, the can size is equal to the diced tomatoes
1 can tomato paste
2 table spoons chopped garlic
1 onion chopped
1 can water
3 tablespoons or more itallian seasonings
1/4 cup sugar

saute garlic and onion in olive oil, then add cans of diced tomatoes, sauce, and paste and 1 can of water add itallian seasonings and sugar.
bring to a boil, reduce heat and simmer
while sauce simmers brown 1 to 1 1/2 pounds ground beef (lean)
drain, then add to sauce and simmer a while longer while you boil noodles.
enjoy
simple and great sauce, can be used for lasagna and other dishes

Chicken stir fry:

Slice and saute some boneless skinless chicken breast
Add a pound of frozen stir fry vegetable
Add a cup of instant white or brown rice
Add soy or teriyaki sauce.
Add a cup of water.

Cover and cook for about 5 minutes and viola - a quick one pot supper.

Boston Market Chicken in the crock pot

Dump in a bag of frozen chicken breasts
Add a can of cranberry jelly
Add a packet of Liptons Onion Soup Mix

let sit at least three hours (all day is fine)....enjoy!

Bbq chicken with mashed potatoes from the box, just add milk and butter (very fast) and frozen mix vegetables, microwave for 2 minutes, pour teriyaki sauce/stir-fry sauce over it, sprinkle a dash of garlic powder and microwave for another minute.

Voila, less than 30 mins, no mess.

1. spaghetti
2. chicken parm. -- bread boneless, skinless chicken breasts;
they cook fast. Serve with a salad -- get a pre-made one.
3. Ham -- get slices of already cooked ham. Steam some
small red potatoes -- cut into 4 before steaming, they cook
faster that way. Serve with applesauce.
4. Turkey cutlets -- Bread turkey cutlets. Serve with mashed
potatoes and peas or green beans. Get frozen veggies, then
steam them.
5. Chicken and rice. Cook boneless/skinless chicken breasts,
then cut into cubes. Cook low sodium Rice-a-Roni. Mix the
cooked chicken into Cream of Chicken soup mix, heat, then
serve over the rice.
