Start by making hard cider. Basically, ale/cider/champagne yeast (take your pick, just not baking yeast) is added to pasteurized apple juice (must not contain any sodium benzoate). Let it ferment for about a month. You might want to check in with some home brewing sites and stores for more specific information.
Once you have the cider, freeze it. Once frozen/slushy, take it out and allow it to start thawing. Pour off what thaws first until about half is thawed. Take what you just poured off and freeze it again. Repeat as many times as you can get it to freeze. The portion that will not freeze is the alcohol...your apple jack. This procedure is called freeze distillatin or "Jacking" hence "apple jack."

Apple Jack
1 gallon apple juice (or 16 pounds apples)
1 cup granulated sugar
1/2 teaspoon yeast energizer
1 1/2 teaspoon acid blend
1/2 teaspoon pectic enzyme
1 campden tablet
1 package champagne yeast (for 1 to 5 gallons)
Place chopped fruit or juice in primary fermentor. Add balance of ingredients. Stir to dissolve sugar. Stir daily for 5 to 6 days or until frothing ceases. Strain out fruit and squeeze as much juice out of it as you can. Siphon into secondary fermentor and attach airlock.
Rack in three weeks, and again every 2 months until the cider is clear.
Gently stir in 1/4 cup sugar per gallon. Bottle in champagne bottles or clean pop bottles. Age three months.

1 oz fresh lemon juice
1 tsp sugar
1 splash soda water

Yes but why..? After grinding and pressing the juice the pomace will turn brown and be very dry.. It is best used as feed for chickens and goats , etc IN small quantities and mixed with other feed Compost - - but again well mixed because of the high acid content...
